Oatmeal Chocolate Chip Pancakes

I am always on the look out for healthier Pancake recipes that don’t taste “healthy” if you know what I mean.  We recently tested out these Oatmeal Chocolate Chip Pancakes with Bananas and they were a big hit with the whole family.  I had to make another batch of them so the kids could all have seconds.  Now THAT is saying something.  Not all meals at our house are received so cheerfully ;)…

Oatmeal-Pancakes

I am not the best at getting up and having a hot meal ready for my family early in the morning.  So I sometimes will make Pancakes at night for dinner and then make a whole bunch of them.  Then we are able to reheat them in the morning for a quick and easy breakfast.  These Pancakes were super yummy even reheated!  My husband even liked them so much, and said he would rather use our ripe bananas to make these Oatmeal Chocolate Chip Pancakes than banana bread.

Oatmeal-Banana-Pancakes

Ingredients:

2 very ripe Medium Bananas

2 teaspoons Baking Powder

3 Tablespoons Wheat Germ

1/8 cup Water

Pinch of Salt

1 teaspoon vanilla extract

2 Tablespoons Butter

2 Tablespoon Coconut Oil or Canola Oil

3/8 cup Milk

1 cup Rolled Oats

1/4 cup Whole Wheat or Unbleached Flour

1/2 cup semisweet chocolate chips (optional)

Oatmeal-Pancakes

Directions:

1. Preheat a skillet to medium heat or about 300-325 degrees.

2. Mash your very ripe banana with baking powder.

3. Add wheat germ, water, oil, salt, vanilla, butter, milk and stir.

4. Stir in oats and flour until just combined.

5. Sprinkle in chocolate chips and fold gently.

6. Scoop 1/4 cup measurements onto lightly greased griddle. And spread out thinly.

7. Cook for 2-4 minutes on each side – until golden brown.

8. Serve plain or with a small drizzle of maple syrup and a few additional chocolate chips for melting.

* This recipe should yield about twelve 4 inch pancakes.

      It seems like I try to add bananas to a lot of things…maybe because they go bad so quickly. Maybe I should stop buying so many bananas in the first place :)

    Sold! These sound great. I’ve made similar variations but they all sort of left me feeling….meh. I bet the wheat germ gives them fullness and WHY have I never added chocolate chips to my pancakes?? I have all these ingredients and zero excuses! Thank you for sharing.
