I post my fair share of sweets and goodies on here. We try to limit the stuff that isn’t good for us and balance it out with food that is good for you. This Chopped Chicken Avocado Salad is so delicious and so good for you! In the warmer weather, I love to be able to create and eat meals that don’t heat up the kitchen or take a lot of work to make.
I shared with you earlier I Can’t Believe It’s Not Butter’s commitment to educating and providing products that contain “good fats.”
So when you are cooking meals for yourself and for your family, try to remember to stick with the following good fats:
- Plant-based oils: Olive, Canola, Sesame and Soybean (Considering our products are made with soybean oil, suggest we add that here) also, recommend we add spreads made from plant-based oils to this list?)
- Avocados
- Nuts
- Fish
- Seeds
This salad is a perfect way to get some good fats into your diet. Add some avocados, nuts and use a dressing that has some plant-based oils in it.

Chopped Chicken Avocado Salad
Romaine Lettuce
Baby Spinach
Grilled Chicken, chopped
purple onion, sliced
Roma tomatoes, sliced
Avocado. chopped
Feta Cheese
Almonds or Walnuts (optional)
Directions:
1. Grill your chicken (marinate or season it as desired), chop it and set it aside.
2. Wash your lettuce and spinach and tear the leaves into bite size pieces. Fill a bowl full of them.
3. Add the rest of the ingredients and toss together. Add as many of each ingredient for your personal taste preferences.
4. Drizzle your favorite Salad Dressing over the salad and enjoy!
We love making our favorite Greek Salad Dressing to go on this Salad! It is so easy to make.
Greek Salad Dressing
1/2 cup olive oil
1 1/3 tsp garlic powder
1 1/3 tsp dried oregano
1 1/3 tsp dried basil
1 tsp pepper
1 tsp salt
1 tsp onion powder
1 tsp Dijon-style mustard
2/3 cup red wine vinegar
Directions:
In a container, mix together the olive oil, garlic powder, oregano, basil, pepper, salt, onion powder, and Dijon-style mustard. Pour in the vinegar, and mix vigorously until well blended. Store tightly covered at room temperature.
This dinner is light and healthy and will leave you feeling satisfied. I like that the whole family will eat this.
