CHOCOLATE COVERED RASPBERRIES
White Chocolate Covered Raspberries (and Blueberries)! I am obsessed with white chocolate and smothering it on delicious things :). I mean…how could you not be. These are soooo easy to make, are perfect for gifting or for a healthier snack choice when you have a little bit of a sweet tooth.
I just love them and they were a hit with the whole family. My intentions were to give most of them away, but they kept disappearing too quickly. I ended up making another batch to give some away to a friend who has been having a rough time.
CAN I USE OTHER CHOCOLATE FLAVORS?
Yes! Any flavor of chocolate will pair well with raspberries…and lots of other fruit if you prefer! I love fresh raspberries and white chocolate so that would be one of my first choices. I have also dipped raspberries in dark chocolate which is also delicious. The fun thing is there are no rules. Experiment and see what combinations you like best! I always prefer using chocolate but I added a couple non-chocolate options as well.

WHAT FRUIT CAN YOU DIP IN CHOCOLATE?
The options are endless! If you love a fruit you can dip it! Here are some of my favorites!
- strawberries
- raspberries
- blueberries
- orange slices
- clementines
- sliced bananas
- dried cherries and fresh cherries
- pineapple slices
- apple wedges
- sliced mango
- kiwi slices
- dried apricots
SHOULD FRUIT BE COLD WHEN DIPPING IN CHOCOLATE?
Make sure you sit your fruit out so that it reaches room temperature before dipping them in your melted chocolate. Most fruit will sweat a little bit after they are covered in chocolate…so when they warm up the chocolate will not be as pretty.
As soon as your have dipped your fruit and the tray is ready, you should move them into the refrigerator or a cool place so the chocolate can harden. Because of this dipped fruit is best eaten the day it has been dipped.
DO YOU REFRIGERATE FRUIT DIPPED IN CHOCOLATE?
Keep newly dipped chocolate cool or in the refrigerator and serve as soon as possible. These are best when eaten the same day they are made. If there are any leftovers, you should keep them refrigerated to make them last longer. Just beware that the fruit will sweat a little bit and won’t be as pretty as they were the day of. They still taste great and can be eaten.
SHOULD I STORE IN AN AIRTIGHT CONTAINER?
You never want to store any chocolate covered fruit in an airtight container. Chocolate covered fruit, but especially strawberries release carbon dioxide, which will end up trapped in a tightly-covered container. This will lead to more sweating. The moisture build-up will cause the fruit to spoil at a faster rate and lead to the taste being negatively affected.
CAN YOU FREEZE FRUIT DIPPED IN CHOCOLATE?
Yes! They freeze great. They won’t look as pretty but will be absolutely delicious. You don’t need to thaw them out to eat. I like mine frozen. But if you prefer, you can let them thaw a bit so they are a little softer to bite into.
DO THESE TASTE LIKE TRU FRU?
I think so! I love Tru Fru! These are a lot more cost effective and fun to make. Funny thing is that I created this and shared this recipe originally back in 2013!! So when Trufru came out I was so excited to try them! I keep mine in the freezer, not the refrigerator. They are definitely one of my favorite desserts.
SUPPLIES NEEDED TO MAKE CHOCOLATE COVERED RASPBERRIES
- Skewers
- Fork
- Microwave
- Wax Paper or Parchment paper
- jelly roll pan
- double broiler
- medium bowl
HOW TO MAKE CHOCOLATE COVERED RASPBERRIES
INGREDIENTS FOR DIPPED FRUIT:
- White Chocolate
- Fruit (raspberries, blueberries)
INSTRUCTIONS FOR DIPPING RASPBERRIES:
- First, make sure you wash your fresh fruit and then let it dry completely before dipping in your chocolate for best results.
- Microwave the White Chocolate chips (or white chocolate block) in a mediumbowl for about 30 seconds at a time. Stir with a spatula between each 30 seconds until they are fully melted. Do not overcook. If you chocolate is not melting smoothly you can add a couple drops (just a little) of coconut oil to the chocolate so it melts and has a creamier, smoother texture.
- If you don’t want to use the microwave to melt your chocolate you can always use a double broiler for great results too. Some of the other chocolates might work better using this method.
- Next, dip the berry in the melted white chocolate using a wooden skewer. I found it easier to gently spear the raspberry in the hole and then dip them in the chocolate. Then gently sliding them onto some wax paper or parchment paper that has been placed on a baking sheet so the chocolate can harden.
- The blueberries I just dipped using a fork. It seemed to work the best this way.
- Let sit on the pan for several minutes and then move into the fridge or a cool spot to harden.
- If you want you can add a drizzle of chocolate or some sprinkles over the finished berries to add some fun flair.
