I love Sundays…

Sundays at our house usually involve church, baking and hopefully a nap or at least some lazy family time.

This is usually when the kids want to help me bake some sort of goodie…and of course…I am happy to oblige.  This past Sunday we decided to try our hand at making some Rocky Road Cookies.

We found this recipe on Allrecipes and changed it up a bit to suit our preferences.  And…well…it was good.  The hubs particularly enjoyed them because of the toasted marshmallows.

Truth be told…I can’t really eat them…due to my food allergies…but I am happy to make them for the family and let them be the food critics…and according to them, this one made the family recipe book.

I was excited to be able to use this fun vintage “cream” bottle I picked up during a thrifting trip this past week!  I am sort of obsessed with cute jars if you haven’t noticed!  I was especially excited that the bottles are from a local area!  They make fun photo props and are perfect for filling my new kitchen hutch…which I hope to finally share with you here soon…even though I have shared pictures of it here in the past!

Anyways…I digress.  These cookies are full of chocolate chips, chocolate, marshmallows and almonds.  I mean…what more could you ask for?

Rocky Road Cookie Recipe

· 1/2 cup butter

· 1 cup semisweet chocolate chips (divided in half)

· 1/2 cup sugar

· 1/2 cup brown sugar

· 2 eggs

· 1/2 tsp. vanilla extract

· 1 and 1/2 cup flour

· 1/2 tsp. baking powder

· 1/4 tsp. salt

· 1 cup chopped almonds

 

Directions:

1.  Set on oven rack at the highest position and the other one in the middle of the oven.  Preheat oven to 400 degrees.  In a small sauce pan, melt together the butter and 1/2 cup of the chocolate chips, stirring frequently. Remove from heat and allow to cool slightly.

2.  In a medium bowl, stir together the melted chocolate mixture with the sugar, eggs and vanilla. Sift together the flour, baking powder and salt, stir into the chocolate mixture. Finally, stir in the chopped nuts and remaining chocolate chips.  Place onto greased cookie sheet.

3.  Bake rolled cookie dough balls on the middle rack of the oven for 5 minutes and then remove cookie tray from oven.  Quickly place a few marshmallows on the top of each cookies.  Place tray back in the oven on the top rack and switch the oven from bake to broil.  Broil the cookies for another 2-3 minutes until the marshmallows are toasty brown and the cookie is fully cooked.  Watch carefully to prevent burning.

4.  Remove from oven and let sit on tray for a minute or two before placing on a cooling rack.  Do not let them sit and cool on the trays as the melted marshmallows may make it really difficult to remove them from the pan.

Caramel Apples Gift Kit–12 Fall Printables

It’s time again for another monthly Printable Blog Hop. If you are new here, every month 11 other bloggers and I join together to bring you a 12 themed FREE Printables for your use. This months theme is Fall. I LOVE everything about Fall. One thing that screams Fall to me are Caramel Apples. We like to try and make them at least once each fall and it has become a fun family tradition. I thought it would be fun to make a Caramel Apples Gift Kit so that we could share the love with other families. Don’t you think that would be a fun gift to get? It has almost all the supplies needed to make some Caramel Apples including some fun toppings and the homemade Caramel Recipe, which is super delicious and not that difficult to make.

I simply took a white gift bag and filled it with 8-10 apples…I used 4 Fuji and 4 Granny Smith (some of my family are fans of the tart apples and some prefer the sweeter). Just use your favorite variety of apples in your Caramel Apples Gift Kit. Then I filled the bag with some fun toppings. Toppings could include crushed Oreos, Chocolate Chips, M&M’s, Nuts, etc. Then be sure to include some sticks. I used some longer sucker sticks, but you could also use wooden popsicle or craft sticks. The other ingredients are things that most households might already have on hand so you can include those at your own discretion.

Homemade Pulled Taffy Recipe —All Things Thrifty

I’m thrilled to be here today.

In fact, Amy is one of my favorite people in this world. I’m a Mom of 4 kiddos and we are ALWAYS looking for a fun activity to keep the kids busy these days. If you are like me, summer is KILLING me. HA. Having the kiddos home for the summer is awesome, but keeping them from saying, “I’m bored” is darn near impossible. My awesome MIL made homemade pulled taffy with the kids a few months ago and they haven’t stopped talking about it since. So in order to prove that I’m just as cool as Grandma, we made it ourselves. {Yeah right, I could never be as cool as grandma, I make them do chores!} BUT, I’m proud to say that we successfully made it ourselves {without Grandma}. So, if I can do it, believe me, YOU can do it. I’m a beginner when it comes to candy making.

Homemade Pulled Taffy Recipe

Ingredients:

2 cups sugar

1 1/2 cups water

1 cup of light corn syrup

2 tsp glycerin

{I bought mine at Michaels’, and I promise you want this ingredient. We tried it without it and it was a MAJOR recipe fail.}

1 tsp salt

Combine all ingredients in a saucepan and cook {stir constantly} until it reaches 258 degrees {use a candy thermometer} . Remove from heat and add 2 Tbls butter and 1 tsp of vanilla, and pour onto a buttered cookie sheet. Wait for the taffy to cool for a few minutes. Once it is cooled enough to handle break off a big piece and start pulling. Pull and fold the taffy until it turns a pearly white color.

That’s pure joy on that face peeps. I’m telling ya, you will make your kids’ day if you make this recipe.

After your taffy is a pretty pearly white color, place it on wax paper and let it cool completely. Break off a piece and enjoy! I hope this will be a fun activity to do with your kiddos this summer!

Rainbow Fruit Pizza–St Patricks Day Recipes

Take a little twist on the sugar cookie fruit pizza for one of your St Patricks Day recipes this year.  A little healthier way to cure your sweet tooth.

Sugar Cookie Fruit pizza is a great and tasty treat for a party or a shower.  They are also easy to serve.  You can also let your guests decorate their own with the fruit of their choice.

Simply take your favorite Sugar Cookie Recipe and add a nice light and fluffy frosting. Then pull out your favorite fresh fruit.

 

Rainbow Fruit Pizza

Ingredients

  • 3/4 cup butter flavored Crisco
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 tsp. vanilla
  • 4 3/4 cups flour
  • 1 1/2 tsp. baking soda
  • 3/4 cup sour cream
  • 3/4 tsp. salt
  • 1/2 tsp. nutmeg

Instructions

  1. Combine soda and sour cream in mixer.
  2. Then add the rest of the wet ingredients and mix well.
  3. Mix in the dry ingredients.
  4. Roll out dough till it is about 1/4 inch thick, on a lightly floured surface and cut out with cookie cutters into desired shapes.
  5. I cut out circles that were 4 inches in size. This is be better if you are making rainbows.
  6. Bake for 10-12 minutes at 375 degrees or until lightly browned.

Amazing Whipped Vanilla Frosting

Ingredients

  • 1 cup of salted butter, room temperature
  • 1 tsp Vanilla
  • 3-4 cups Powdered Sugar
  • 1-2 tsp. Milk
  • 1 16 oz. tub of Cool Whip

Instructions

  1. Use room temperature butter (otherwise you will get chunks of butter in your frosting), place it into mixer and whip together until nice and smooth.
  2. Then add 1 teaspoon of vanilla.
  3. Gradually add about 3-4 cups of powdered sugar (Confectioner’s sugar).
  4. It will be a bit chunky and not very smooth.
  5. Gradually add 1 teaspoon of milk while mixing frosting.
  6. If it is still not the consistency you desire, add another teaspoon of milk until you get a nice thick frosting that is smooth.
  7. Then fold in 1 tub of Cool Whip.
  8. Serve immediately or keep in refrigerator before serving.

In this case I wanted fruit that was the color of the rainbow.  I used Raspberries, oranges chopped, crushed pineapple, kiwi, and blueberries.

These got pretty rave reviews from my built-in taste testers.  But unfortunately these fall in the category of things I can no longer eat….but that is okay…I was happy just eating the rest of this colorful plate of fruit for my dessert.  Everyone was happy and you can’ t beat that…and you have another addition to your simple St Patricks Day recipes.

Vanilla Peppermint Pattie Milk Shake

Valentine’s Day at our house usually consists of my husband and I celebrating at home with our children.  We have done this since the kids were little.  I am sure it was because it was difficult to find a babysitter or the fact that the restaurants had a two to three hour wait.  But either way, it has become a fun tradition at our house.

The entire family looks forward to having a nice “candlelight” dinner together.  The hubs and I usually get the kids a small gift or goodie from us and then we play games or watch a movie as a family.  It has become a time for us to enjoy and spend time with each other in a busy world that usually has us running from one thing to the next.  It has become a good night for us to reconnect.

This year I thought it would be fun to cap off our dinner and enjoy some good Old Fashioned Milk Shakes while playing games together.  Have you tried any of these yummy Coffee Creamers from International Delight?  They are not just for coffee people.  I added some to a Vanilla shake and you have a yummy dessert.

Now, unfortunately due to my recent milk allergy (among others) I will not be able to enjoy these with the family.  But some almond butter on a rice cake should be fine for me to along side them…right?! haha

Here is how you make them:

Old Fashioned Vanilla Peppermint Pattie Shake

3 cups of Hard Vanilla Ice Cream (not soft serve)

1/2 cup Milk

1/4 cup International Delight York Peppermint Pattie Coffee Creamer

Raspberries for garnish (optional)

Mint Garnish (optional)

Blend all ingredients together in your Blender until thick and creamy.  You can add more milk or Creamer to your shake depending on your preferences.  Serve in a tall, frosty mug with a stripe-y straw and a spoon.

Chocolate Sandwich Heart Cookies

Earlier I shared with you how I made these fun glittery heart milk bottles.  Bottles that can be used to decorate your Valentine’s Day dinner or party. I had a few of you email me and ask me for the Chocolate Drop Cookie Recipe that I used to make this Chocolate Sandwich Heart Cookies.

This is one of our favorite drop cookie recipes.  The best part about it is that you can add different chocolate chips like mint, peanut butter, white chocolate, toffee chips, nuts, caramel bits, etc. depending on your mood and taste preferences.  Here is the recipe:

Chocolate Drop Cookies

Ingredients

  • 1/2 cup Shortening or Butter Flavor Crisco
  • 1/2 cup Butter
  • 2 cups Flour
  • 2/3 cup Cocoa Powder
  • 1 cup Sugar
  • 3 Tablespoons Milk
  • 1/2 cup Brown Sugar
  • 2 Eggs
  • 2 teaspoon Vanilla
  • 1/4 teaspoon Baking Soda
  • 1/2 cup add ins (ie. choc. chips) (optional)

Instructions

  1. Pre-heat oven to 375 degrees.
  2. Beat Shortening and butter with a mixer on Med-High speed for about 30 seconds.
  3. Add half of the flour and mix it with the sugar, brown sugar, milk, cocoa, eggs, vanilla and baking soda.
  4. Beat thoroughly until combined.
  5. Mix in the remaining flour.
  6. Fold in any add ins.
  7. Drop by rounded teaspoons onto an ungreased cookie sheet.
  8. Bake at 375 degrees for 8 to 10 minutes till the edges are slightly crisp.
  9. Remove from pans and cool on wire racks.
  10. Makes about 48 cookies.

After the cookies have cooled completely you can take a heart shaped cookie cutter and cut the cookies into hearts.

Then slap on some of your favorite frosting between the flat sides of two cookies.  Now…some of my kids don’t love chocolate cookies…I know…weird.  So we had a couple of chocolate chip cookies left over from last Sunday when the kids were craving Chocolate Chip Cookies.

Serve these at a family party or give them away to friends and family!

Peppermint Candy Cane Donuts

These are pretty darn tasty!  But what if you aren’t a huge chocolate fan?  What?  I know…how could there be someone who doesn’t like chocolate.  I do actually know a few of you!

Don’t worry…I’ve got you covered too.  Vanilla Peppermint Candy Cane Striped Donuts!

And well, you can always have one of each if you are having a hard time deciding.  They ARE mini-donuts after all!

Perhaps the best part about these are how SIMPLE they are to make.  All you need to do is make up your favorite chocolate or vanilla cake batter.  Or…just whip up a store bought cake mix.   candy-cane-desserts

Throw a couple of drops of peppermint essential oil or extract into the batter and then bake them in a mini donut maker.  I found mine at Target and I absolutely LOVE it.  I even threw in some crushed candy canes in some of the precooked donuts.

To make the frosting simply take 2 cups of Confectioner’s Sugar (powdered sugar) and mix in 2-3 Tablespoons of milk till you get the desired consistency.  Sprinkle crushed candy canes over the newly frosted donuts.  Serve with friends, a TALL glass of milk and a stripey straw!

Chocolate Chip Pudding Cookies

I am always on the look out for the perfect Chocolate Chip Cookies.  I have a few recipes that I think are in the running for my favorites.  I consider it my mission and duty to find the perfect Chocolate Chip Cookie.  Plus it is fun testing out new recipes.

What do you look for in the perfect Chocolate Chip Cookie?  Me?  I love a Chocolate Chip Cookie that is full of Chocolate Chips…duh!  I also like mine to be soft and chewy on the inside and a little crisp on the outside.

This cookie recipe has all of the above.  It also has an unexpected ingredient…vanilla pudding.

Chocolate Chip Pudding Cookies

Ingredients:

Directions:

  1. Mix flour and baking soda and set aside.
  2. Then combine margarine, sugars, vanilla, and pudding mix in a large mixing bowl and beat until smooth and creamy.
  3. Beat in eggs.
  4. Gradually add flour mixture.
  5. Then stir in chips (batter will be stiff).
  6. Drop dough by rounded teaspoons on ungreased baking sheet.
  7. Bake at 375° for 8-10 minutes.

Peanut Butter Rice Krispie Treats

May is CRAZY!  School ends here in less than 2 weeks and it seems like we are involved in non-stop programs and activities. My baby is graduating from Pre-School (which is sad…but not too sad.  She missed the school deadline so she will be back in Pre-School next year.  Which means I get one more year before I have to send her off to school with the big kids…sniff!)

For her graduation I signed up to bring some treats. I dug through my old recipes and decided to whip up some Peanut Butter Rice Krispie Treats also known as Scotcheroos.  These are so yummy.  They also have Butterscotch and Chocolate in them!

It is a good thing I gave most of them away.  These things are not good for you at all…but then again…they are TREATS!

Peanut Butter Rice Krispie Treats

Peanut Butter Rice Krispie Treats

1/2 cup sugar

1 cup Karo Syrup

1 cup Peanut Butter (smooth)

3/4 bag of Butterscotch Chips

6 cups of Rice Krispies Cereal

1/2 cup Semi Sweet Chocolate Chips

 

Instructions:

1.  Melt the sugar, Karo Syrup, Peanut Butter and Butterscotch Chips in a large sauce pan on Medium heat on the stove top.

2.  When the mixture is smooth and creamy, remove from the heat and stir in the Rice Krispies.  Stir so that they are all evenly covered.

3.  Spread the mixture into a greased 9 x 13 pan.

4.  Immediately pour the Chocolate Chips and spread out evenly on the top of the Rice Krispie mixture.  Let the chocolate chips melt due to the heat from the mixture.  Take a rubber spatula and spread the melted chocolate over the entire top.

5.  Pop into the fridge to let the chocolate harden and set up before serving.

Cinnamon Banana Cake

Yesterday was Mr. Idea Room’s birthday! He likes food in general…but he really likes cake.  Especially our Cinnamon Banana Cake.  This recipe has been part of my family’s recipes for as long as I can remember.  We actually call it Sandy’s Cake.  I have no idea why.  I should probably ask because there could be a great family history story behind it.

Anyways…One of my favorite things about this cake is that it is made with bananas.  And for some reason when I buy bananas…they either are gobbled up quickly before I can use one on my bowl of Cheerios in the morning (grrr…and yes…I LOVE me some Cheerios).  Or, they sit and turn brown forgotten in the fruit basket.

So, this is one of our favorite go to recipes.  This is also a recipe that we like to make and share with our neighbors and friends.

Cinnamon Banana Cake

1 cup butter  
1 cup sugar
2 ripe bananas
2 eggs
1 tsp. vanilla
2 tsp. baking powder
2 tsp. baking soda
1 dash salt
3 cups flour
1 pint sour cream (2 cups) or vanilla yogurt

Blend butter, sugar, bananas, eggs and vanilla. Add remaining ingredients. In another bowl make the filling.

Filling:
1/3 cup brown sugar
1 Tbs. cinnamon
1 cup chopped walnuts or pecans (optional)
1 cup chocolate chips (optional…but why wouldn’t you?)

Layer batter and filling twice in a 9X13 dish. Bake 350 degrees F for 45 minutes.

* Sometimes the middle of the cake needs to bake longer.  If so, put foil over the cake after the 45 minutes and bake it for another 5 minutes.  Test with a toothpick in the middle to see if the batter sticks to it, if it comes out clean…the cake is finished.
