CHICKEN PARMESAN
If you love a great chicken recipe for dinner, you and the family are going to love today’s Creamy Sun Dried Tomato Garlic Parmesan Chicken Recipe. This is one of those easy dinner recipes that can be whipped up when you don’t have a lot of time, but want to eat a delicious homemade meal.
This is one of our family’s favorites and can be served alone or one your favorite pasta noodles. We have also served it over rice on occasion. Pair it with your favorite side dish or vegetables and you have a dinner recipe that will be a permanent addition to your family’s recipe book.
CREAMY PASTA SAUCE
The flavor is so rich and amazing! You can cut some calories by finding a good replacement for the heavy cream if you want, but I like to use it because it gives it a really rich flavor and we try to cut fat and calories in other ways in our home.
HOW TO MAKE CREAMY PASTA SAUCE
INGREDIENTS:
- 1½ pounds boneless skinless chicken breasts, thinly sliced
- 2 Tablespoons olive oil
- 1 cup heavy cream
- ½ cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon italian seasoning
- ½ cup parmesan cheese
- 1 cup spinach, chopped
- ½ cup sun dried tomatoes
- Mushrooms, sliced (optional)
DIRECTIONS:
- In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
- Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach, mushrooms and sun dried tomatoes and let it simmer until the spinach starts to wilt.
- Add the chicken back to the pan and serve over pasta if desired.
SUN DRIED TOMATO PASTA

Ingredients

- 6-8 each Mushrooms sliced (optional)

Go ahead and give it a try this week! I truly think you will love it. As always, you can leave out some of the additions like the spinach, sun dried tomatoes or mushrooms. Substitute them with things your family will eat if you don’t think they will like them. The great thing about this is that you can customize those add ins on an individual basis for your family’s needs.
