My son is constantly hungry. First of all, he is a teenage boy…second, he is a swimmer and plays water polo on his high school team. Needless to say, he is always looking for something to eat. I taught him how to make himself some delicious Granola & Berry Crisp. This recipe is a really simple version of the popular Berry Crisp and can be with little effort and a few ingredients. These are great for an individual serving for one!
Instead of mixing up ingredients to make the “crisp” portion, we simply used some Nature ValleyTM Granola. Nature ValleyTM Protein Granola is a delicious versatile product that can be added on top of many other foods or used as an ingredient. We love to use a sprinkle of granola on top of a bowl of yogurt topped with fresh berries (see below), as a breakfast cereal, on top of our favorite salads or mixed in our favorite trail mix.
Earlier I shared with you a fun and delicious way to cool off in the summer with these Yogurt, Fruit and Granola Popsicles! You could even get away with eating these for breakfast! Popsicles for breakfast are always a good idea in my book…am I right?!
To make the Granola & Berry Crisp, you will need to do the following:
Granola & Berry Crisp
1 cup fresh fruit (frozen works too)
1 1/2 Tbsp. cornstarch
1 tsp. sugar (optional)
drizzle of fresh lemon juice
1/2 cup Nature ValleyTM Granola
Directions:
1. Preheat oven to 350 degrees.
2. Fill a small ramekin with your fruit. Washed if fresh.
3. Sprinkle the lemon juice, cornstarch and sugar (if using) over the fruit.
4. Bake for 15 minutes. Remove from oven and top with granola.
5. Place back in oven and bake for an additional 5-8 minutes.
6. Remove from oven and stir together. Drizzle with some yogurt if desired. Serve immediately.
*You can easily adjust the recipe to make a larger quantity in a large baking dish if desired. Just add a little bit more sugar, cornstarch and lemon juice to the larger amounts of fruit and granola. You really don’t have to be perfectly precise as this is a pretty easy, no fail recipe!

What a clever idea to make the crisps individually in small dishes! I bet it’s quick to throw together too when you just need a little something sweet – or for a dinner party where it’s fun to have individually portions desserts.
