Chocolate Raspberry Cookies

Last week some of my siblings and I, along with our parents and a few of our kids went up to a relative’s berry farm and picked some fresh raspberries.  I LOVE me some fresh raspberries.  I think they have to be one of my favorite fresh fruits, or at least right up there with fresh peaches and cherries!  I used most of the raspberries we picked to make some Raspberry Jam (which I will share here soon), froze some for smoothies, and still had a few left over to sprinkle over our cereal and to throw in these yummy cookies.

I wanted to make some raspberry scones, but at the last minute decided to make up a batch of Chocolate Chip Cookies and throw in some of the fresh raspberries!  Oh…My….Goodness!  They are so good!  The chocolate and the tangy raspberries make the perfect combination of sweet and tart when combined.  I especially liked them when they were warm right out of the oven.

I simply made a few adjustments to one of our Chocolate Chip Cookie recipes and threw in some white chocolate chips along with the raspberries.  I wanted the raspberries to remain as whole as possible instead of being smashed in the cookie, so I was very careful with the cookie dough.  I made the dough all the way up and added the raspberries at the very end.  I simply broke the dough apart and added a little at a time to a fresh bowl and then sprinkled the raspberries in the bowl in layers.  Does that make sense?

Then when the scooped the cookie dough into balls, I scooped up some raspberries in each ball with an ice cream scoop, so that the raspberries were spread evenly to each cookie.  If you don’t have access to fresh raspberries, you could just as easily use some frozen raspberries straight from the freezer.

Chocolate Raspberry Cookies

Ingredients

  • 1 cup butter, room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 5 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cream of tartar
  • 1 cup white chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup raspberries

Instructions

  1. Pre-heat oven to 350 degrees Farenheit.
  2. Cream the butter & sugars until light and fluffy.
  3. Add eggs, vanilla and almond extract and mix well together.
  4. Add dry ingredients and mix until just combined.
  5. Add white & semi-sweet chocolate chips.
  6. Place cookie dough into separate bowl by breaking into pieces and scatter the raspberries in the dough so they are distributed evenly and do not get smashed up.
  7. Scoop out cookie dough with a spoon or ice cream scoop making sure to grab a couple of raspberries for each cookie.
  8. Place on greased cookie sheet.
  9. Bake in a 350° oven for 12-15 minutes depending on how big you make your cookies.
  10. The cookies should be golden brown on the edges and white an fluffy in the centers.
  11. Cool on a baking rack.
  12. Makes about 48 cookies depending on the size.

These Chocolate Raspberry cookies are a fun and unique twist to the regular chocolate chip cookie!  They will be gobbled up quickly though so be sure and pull some aside for yourself before your family and friends eat them all!

Chocolate Chip Muffins Recipe

On Sundays, my daughter usually likes to make something in the kitchen. So of course I am all for that. She has become quite the little baker. A couple of weeks ago she decided to make some Chocolate Chip Muffins from scratch. They turned out pretty tasty if I do say so myself.

These Chocolate Chip Muffins have a great texture and consistency and are nice and moist but a little crispy on the edges, which in my opinion is a pretty good combination. Throw in some nuts or craisins in addition to the Chocolate Chips and you can kick them up another level.

Chocolate Chip Muffins Recipe

Ingredients

  • 2 cups flour
  • 1/3 cup brown sugar, packed
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup butter, melted
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla
  • 1-2 cups chocolate chips (depending on your chocolate needs)
  • nuts (optional)

Instructions

  1. Preheat oven to 400°F.
  2. Grease twelve muffin cups.
  3. In a large bowl, stir together flour, sugars, baking powder, and salt.
  4. In another bowl, stir together milk, eggs, butter, and vanilla until blended.
  5. Mix in the dry ingredients.
  6. Add milk mixture and stir just to combine.
  7. Stir in chocolate chips.
  8. Spoon batter into prepared muffin cups.
  9. Now bake for 15-20 minutes or until a toothpick inserted in center of one muffin comes out clean.
  10. Cool for 5 minutes.
  11. Remove from tins to finish cooling.

These were a hit and if you double the recipe, you can freeze them and save them for later. We did just that and the kids were able to save some and throw them into their school lunches or grab as a quick and easy after school snack or a quick snack on their way to ballet or lacrosse practice.

Best Chocolate Chip Cookies…for reals

So…you can tell what kind of a week I have been having by the posts I share.  This week has been a tough one for a few different reasons.  Like I mentioned before, I fell off the food allergy wagon…but I picked myself up off the ground, dusted myself off, and am working on climbing back on.   I was also sick yesterday, which is why there was no post.  I spent my working time in bed asleep!

In my self pity I decided to try a recipe I had been given from my friend Stacy who swears that these are THE. BEST. CHOCOLATE. CHIP. COOKIES. EVER!  Since I was already off the bandwagon, I thought…why not take the challenge and see if these cookies really are the best chocolate chip cookies.

And since my daughter has been wanting to bake goodies for my blog, it was the perfect recipe for her to bake up.  You guys…these are good and dare I say it…one of the best Chocolate Chip Cookie Recipes I have tried.  I think they are my new favorite…now I just need one of you smarties out there to turn this recipe into a gluten free version since I am getting back on the allergy bandwagon.

Best Chocolate Chip Cookies…for reals

Ingredients

  • 3/4 cup unsalted butter (at room temperature)
  • 3/4 cup light brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 2 cups flour
  • one (3.4 oz.) package of instant vanilla pudding mix
  • 1 tsp. baking soda
  • 1/8 tsp. salt
  • 1-2 cups semi-sweet chocolate chips (according to your chocolate needs)

Instructions

  1. Cream together butter and sugars till smooth.
  2. Add in egg and beat well.
  3. Add the rest of the ingredients one by one and mix well.
  4. Fold in chocolate chips.
  5. Scoop into balls on a greased cookie sheet. I like to use a medium ice cream scoop so the cookies come out the same size.
  6. Bake in a 350 degree oven for 10-12 minutes.

Oatmeal Chocolate Chip Cookies

Let’s talk about cookies. I am a fan. Always have been, always will be. I usually prefer my cookies to be homemade. They just taste better to me. I am a fan of chocolate chips in my cookies…LOTS of chocolate chips. They make me happy!

But…if I were to buy a cookie…I would prefer to buy myself a cookie from our local Mrs. Fields Cookies. These Oatmeal Chocolate Chip Cookies are one of the closet recipes we have found to Mrs. Fields Chocolate Chip Cookies. And this my friends is a good thing!

Even though I can’t eat these anymore…my kids can. Back to school always means Homemade Chocolate Chip Cookies at my house. It was a tradition in my home growing up that I have carried through into my own home.

It has been a while since we made this particular recipe because we have been making the World’s Best Peanut Butter Chocolate Chip Cookies or our Chocolate Chip Pudding Cookies.

So, when the kids started back to school last week, I whipped up some of these delicious Oatmeal Chocolate Chip Cookies.

They were a big hit. My husband wondered why we hadn’t been making these more often. (Probably because I don’t like to torture myself with having them in the house when I can’t eat any) Smile

But I survived and only cheated with one tiny little cookie…and with the kids and their friends, they were gone in no time. Make some for yourself and let me know what you think.

Oatmeal Chocolate Chip Cookies

Oatmeal Chocolate Chip Cookies

Ingredients

  • 2 cups butter
  • 2 cups white sugar
  • 2 cups brown sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 4 cups flour
  • 5 cups rolled oats (measure 5 cups then blend in blender into fine flour)
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 24 oz. chocolate chips
  • one 8 oz. Hershey’s Bar

Instructions

  1. Cream together butter, sugars, eggs and vanilla.
  2. Mix in the dry ingredients.
  3. Add chocolate chips and grate the Hershey Chocolate Bar into the cookie dough.
  4. Roll into small balls onto greased cookie sheet.
  5. Bake in a 375 degree oven for 8-10 minutes or until golden brown.
  6. Makes 4-5 dozen cookies.

We made some DE.LI.CIOUS chocolate chip cookie dough cupcakes for my friends birthday the other day. They turned out amazingly good. My husband and kids love chocolate chip cookie dough and cookie dough ice cream. So what could be better than cupcakes with chocolate chip cookie dough inside of them? My family got to enjoy the leftovers.

For those of you worried about eating cookie dough containing raw eggs…no need to worry. This cookie dough is egg-less, but still tastes just like cookie dough. Brilliant! Go ahead and whip some up for your dessert! But don’t eat more than one as they are NOT low-fat!

I think I will use the recipe for the egg-less cookie dough filling in some homemade vanilla ice cream this summer! By the way…I am eating treats again…within reason of course!

I had a few emails concerning the frosting recipe I used. I used the one from Annie’s Eats but mine did look different than hers. I really whipped mine so that it was nice and fluffy. I applied it using a pastry bag with a large tip and just swirled it onto the cupcakes. The small cookies I stuck in the frosting were mini-Chips Ahoy cookies by Nabisco.

For the frosting:
3 sticks unsalted butter, at room temperature (Yikes! That is some butter :)
¾ cup light brown sugar, packed
3½ cups confectioners’ sugar
1 cup all-purpose flour
¾ tsp. salt
3 tbsp. milk
2½ tsp. vanilla extract
