Rainbow Fruit Pizza–St Patricks Day Recipes

Take a little twist on the sugar cookie fruit pizza for one of your St Patricks Day recipes this year.  A little healthier way to cure your sweet tooth.

Sugar Cookie Fruit pizza is a great and tasty treat for a party or a shower.  They are also easy to serve.  You can also let your guests decorate their own with the fruit of their choice.

Simply take your favorite Sugar Cookie Recipe and add a nice light and fluffy frosting. Then pull out your favorite fresh fruit.

 

Rainbow Fruit Pizza

Ingredients

  • 3/4 cup butter flavored Crisco
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 tsp. vanilla
  • 4 3/4 cups flour
  • 1 1/2 tsp. baking soda
  • 3/4 cup sour cream
  • 3/4 tsp. salt
  • 1/2 tsp. nutmeg

Instructions

  1. Combine soda and sour cream in mixer.
  2. Then add the rest of the wet ingredients and mix well.
  3. Mix in the dry ingredients.
  4. Roll out dough till it is about 1/4 inch thick, on a lightly floured surface and cut out with cookie cutters into desired shapes.
  5. I cut out circles that were 4 inches in size. This is be better if you are making rainbows.
  6. Bake for 10-12 minutes at 375 degrees or until lightly browned.

Amazing Whipped Vanilla Frosting

Ingredients

  • 1 cup of salted butter, room temperature
  • 1 tsp Vanilla
  • 3-4 cups Powdered Sugar
  • 1-2 tsp. Milk
  • 1 16 oz. tub of Cool Whip

Instructions

  1. Use room temperature butter (otherwise you will get chunks of butter in your frosting), place it into mixer and whip together until nice and smooth.
  2. Then add 1 teaspoon of vanilla.
  3. Gradually add about 3-4 cups of powdered sugar (Confectioner’s sugar).
  4. It will be a bit chunky and not very smooth.
  5. Gradually add 1 teaspoon of milk while mixing frosting.
  6. If it is still not the consistency you desire, add another teaspoon of milk until you get a nice thick frosting that is smooth.
  7. Then fold in 1 tub of Cool Whip.
  8. Serve immediately or keep in refrigerator before serving.

In this case I wanted fruit that was the color of the rainbow.  I used Raspberries, oranges chopped, crushed pineapple, kiwi, and blueberries.

These got pretty rave reviews from my built-in taste testers.  But unfortunately these fall in the category of things I can no longer eat….but that is okay…I was happy just eating the rest of this colorful plate of fruit for my dessert.  Everyone was happy and you can’ t beat that…and you have another addition to your simple St Patricks Day recipes.

St. Patricks Day Gifts

You guys…I am obsessed with these bottles (recycled Starbucks Frappucino).  So I apologize in advance for this project.  But I just could not help myself!  I realized that I hardly have any St. Patrick’s Day Gifts or décor ideas on The Idea Room.  I decided that I needed to fix that.  So be prepared for a few simple and easy ideas in the coming week.

I LOVE rainbows so it was the first thing I thought of.  This is definitely not a new idea and I have seen it all over, but I thought I would put my own little spin on it.  The spin will come in the next post…but here is the first version for you if you would like to duplicate it for your own use.

I like both of these fun containers.  The tall skinny test tube container was picked up from Michaels and is perfect to give a small little treat to a neighbor or friend.

The files for the “Happy St. Patrick’s Day” Labels measure 3 x 2.5 inches.  The round “I Am Lucky” Tags print out at 3 inches.  You can use them as labels at this size.  If you want the round tag to fit the top of the Starbucks Bottles you will need to be sure and print the labels at 50% of the original size so that they will measure 1.5 inches and they will fit perfectly on the top of the lid.

St. Patrick’s Day– Leprechaun Trap

Have you ever caught a Leprechaun? No? Well we have not either…but we sure do try every St. Patrick’s Day.  The kids love to set a Leprechaun Trap for a little St. Patrick’s Day Fun.  Today we’d like to teach you how to trap a leprechaun.

We have never caught one of those sneaky little Leprechauns.  The Leprechauns come in the middle of the night and snatch our little black pot, without setting off the trap, and leave a trail of little green footprints to a hidden clue. This clue leads to another and so on, sending the kids on a “treasure hunt”. After following the trail of clues, the kids are eventually led to the “end of the rainbow” where they find a “pot of gold!”

The Leprechauns usually leave us some Rolo candies, peppermint patties, and Hershey’s kisses and Pot of Gold candy. (Basically anything the “Momma Leprechauns” can find that has a silver or gold wrapper). We painted a “pot” black (a terracotta plant from any craft store).

Each St. Patrick’s eve, in anticipation of the Leprechauns arrival we set out the pot underneath a trap (a laundry basket held up by a stick that has a notch on the end). For bait, we put some broccoli into the pot because everybody knows that Leprechauns love broccoli (hence their greenish skin color). pot of gold leprechaun wm Every year the trap goes untouched, the broccoli is missing and the pot has been hidden for us to seek and discover.
