We took a trip last week over the 4th of July Holiday to my husband’s home town and where he grew up. His mom still lives there and it is fun to go back there and share the things and places he used to do as a kid. My mother-in-law is an excellent cook and so we eat very well when we are there. She is a big believer in good homemade breakfasts and one of my favorites is when she makes her Whole Wheat Pancakes.
Now, normally I am not a big breakfast eater. I tend to prefer lighter breakfasts of yogurt and fruit sprinkled with a bit of granola, or a scrambled egg with some veggies in it. I also enjoy a simple bowl of Cheerios with some sliced fruit in it. But when we are at Grandma’s house, I really enjoy eating these Whole Wheat Pancakes. They are a lot lighter and fluffier than other Whole Wheat Pancakes I have had and don’t tend to sit like a rock in the pit of my stomach all day. Do you know what I mean?
She makes hers in this cast iron pan so that they are all the same size and the cast iron pan cooks them evenly and thoroughly. The pancakes will turn out best if cooked in the skillet pan slowly over a low heat.
Here is her recipe:
Whole Wheat Pancakes
1 ½ Cups Wheat Flour
1 Tablespoon Baking Powder
3 Tablespoons Raw Sugar or Brown Sugar
2 Egg Yolks
1 ½ Cups Milk
3 Tablespoons Oil
Mix all the above and then fold in 2 Beaten Egg Whites.
Pour a small amount of batter into each skillet hole and cook on a low heat (medium) until one side is brown.
Flip the pancake over and cook on the other side until it is also brown.
Serve with fresh fruit and the syrup of your choice.
My mother-in-law also serves hers with fresh whipping cream.
Since I am not a big fan of whipping cream on my breakfast, I skip that part…but my husband and kids love it!

I’m definiately going to have to try these! Making sure to pin this so I don’t forget! :) I know what you mean about the heaviness of whole wheat. I made some muffins the other day that weighed a TON! I found a good recipe for waffles that uses half whole wheat and half finely ground oats. They are really good! :)

Those look delicious! I’m always on the lookout for good whole wheat recipe. I’ll be “pinning” this for sure! I am usually starving in the morning but lately my breakfast has been a Slim-Fast (Kroger brand–tastes better than the real thing) on the way to the gym. But if I had my choice–and my choice of metabolism–it would be biscuits and gravy with a side of scrambled eggs, bacon and freshly squeezed OJ!

I would really like to make these, but I need a clarification! In the recipe ingredients you put 2 egg yolks, and the directions say 2 egg whites. Which is correct? Thanks for sharing!
Oh…good point! You use two eggs. Separate the eggs first and use the yolks first with the other ingredients. Then fold in the two egg whites that have been beaten first. Does that make sense? Thanks for the great question. I am sure others were wondering the same thing.

Well, I would say that depends on how large you make each cookie. My best guesstimate would be around 12-24.
I just made these tonight in a regular cast iron skillet. I subbed in almond milk for the regular milk and applesauce for the oil. Made a double batch. Family loved them :)
Thanks for the recipe ! I did make some changes… I put about 3 tblsp of pureed carrot (from a baby jar) it gets a bit of veggies in there but it also tastes great. I’ve done this with the boxed pancakes and have been wanting to make homemade whole wheat ones. Some had some chocolate chips thrown in… what can I say they fell in. Thanks for sharing.
Thank you for sharin this recipie. My two boys (age 17 & 5) love these pancakes. They are tasty, fluffy, & filling! This is just what we needed as I am eliminating as much processed food and white flour as I can.
I made these tonight. They were amazing and so fluffy! We put in blueberries. Very good. I lucked out as this was my first recipe using whole wheat flour and they were so good!

I was wondering the same thing about the T measurement. Is that supposed to be Teaspoon or Tablespoon? I haven’t used your recipe yet b/c I wasn’t sure. 1 Tablespoon of baking powder sounds like a lot. Please clarify. Thanks.
