This is the best Whoopie Pie Recipe we have tried…and we have tried a few! Delicious with Marshmallow Frosting or Peanut Butter Buttercream Frosting.
WHOOPIE PIE
Whoopie Pies always remind me of growing up. We didn’t have them very often, but when we did, it was always something we were excited as kids. They seem to take a little it more effort than a regular cookie recipe, but they don’t disappoint. But beware, they are pretty rich…which is good because you won’t be able to eat more than one in a sitting. I have tried a few different recipes in search of the best one, and this recipe is my favorite one so far!
WHAT IS A WHOOPIE PIE?
A Whoopie Pie is a dessert or snack made from two soft cookies, typically chocolate, with a creamy filling sandwiched in between.
We usually always make them and fill them with a yummy Marshmallow Frosting. But sometimes it can be fun to switch things up. This time we whipped up some delicious Peanut Butter Buttercream Frosting! We found the recipe on allrecipes, and it was pretty tasty! I think it will be a keeper! If you like Peanut Butter, you are probably going to enjoy this frosting. It has a great consistency and flavor!
Whoopie Pie Recipe
This is the best Whoopie Pie Recipe we have tried…and we have tried a few! Delicious with Marshmallow Frosting or Peanut Butter Buttercream Frosting.
Ingredients
- ½ cup unsweetened cocoa
- 2 cups all-purpose flour
- 1 ½ teaspoons baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup vegetable shortening
- 1 cup sugar
- 1 egg
- 1 cup whole milk
- 2 teaspoons vanilla extract
FROSTING
- 8 ounces marshmallow fluff
- 1 cup confectioners' sugar
- ½ cup vegetable shortening
- ¼ teaspoon vanilla extract
- 1 tbsp milk up to 1 tbsp
Instructions

Preheat the oven to 450 degrees.

Grease cookie sheets or line with parchment paper.

In a medium bowl, combine cocoa, flour, baking soda, baking powder and salt. Stir to mix and set aside.

Cream the shortening and sugar together. Add the egg, milk, and vanilla extract and mix well.

Slowly add dry mixture to the mixing bowl and mix well.

Using a medium ice cream scoop, place scoops of the batter onto the cookie sheets. (The batter will be a little sticky).

Bake at 450 for 6-7 minutes. Do not over bake.

Remove immediately to cool on a wire cooling rack.

When the cookies are cooling, you can make your frosting.

Combine the marshmallow fluff, confectioners' sugar, shortening and vanilla extract in the bowl of a stand mixer and mix until completely combined. Slowly add the milk until you get a good consistency.

Place frosting on the bottom side of one cookie. Find another cookie that is a close match in size and make into a cookie sandwich.

Store in an air-tight container.
Either way, these cookies make a great addition to family night, parties or your next BBQ with friends! They are always a hit. And if you make them for a party to share with your friends, they won’t be around the next day…calling your name…waiting to be eaten for breakfast….
Peanut Butter Buttercream Frosting
Ingredients
- 1/2 cup butter
- 1 cup creamy peanut butter
- 4 cups confectioners' sugar
- 1/3 cup cream
Instructions

In a large bowl, beat butter and peanut butter until light and fluffy.

Slowly beat in 1/2 of the confectioner's sugar.

Mix in 1/4 cup of the cream.

Beat in the remaining confectioners' sugar.

If necessary, add a little more cream or milk until the frosting reaches a good spreading consistency.
Makes enough frosting to frost one 2 layer 9 inch cake or one 9 x 13 inch cake.

How many pies does the recipe make?
Would love to make for Christmas Cookie Exchange. How many does this recipe make? Thank you for great recipe, but need to know yield…lol.
Ginger- It make 8-10 Whoopie Pies depending on the size.
We have made these with the regular frosting, but that peanut butter buttercream sounds incredible! I will have to make a batch this week, to try it! My kids love them!
