I have been posting a lot of recipes lately! I realized that my oldest son could be moving out of the house here in in just over a year and it is kind of freaking me out. He LOVES to eat and he loves good food and he is a swimmer…so that means he eats…a LOT! I am determined to make him miss my home cooking when he is gone and hopefully be drawn back home for some good meals. Ha! So, this might explain all the food and recipe posts lately! I hope you don’t mind. Today I want to share with you this delicious Crock Pot Chicken and Black Bean Soup Recipe.
This is truly one of those Crock Pot recipes that you can literally dump everything in and just let it simmer away all day long. I always enjoy having the kids come home from school and ask me what smells so good! They know they are going to be getting a yummy dinner (and believe me…they are not always excited about what’s for dinner). And who doesn’t love a simple dinner recipe? Everyone has busy lives and it’s nice to sit down to a homemade meal…even if everyone if off and running again!
Slow Cooker Creamy Black Bean Chicken Soup
2 chicken breasts
1 cup chicken broth
1 can black beans, drained and rinsed
1 can corn, drained
1 cup salsa
1 package taco seasoning
1/2 cup sour cream (optional)
1/2 cup cheddar cheese (optional)
Tortilla chips
Instructions:
- Place chicken in crock pot. Pour broth, beans, corn, salsa, and taco seasoning over chicken.
- Cook on low for 6 hours (or high for 3 hours).
- Remove chicken and shred. Re-add chicken.
- If desired, add sour cream and cheese to crock pot. Stir until smooth. (Or add desired amount to individual servings)
- Serve with tortilla chips.

My husband makes an awesome chilli in the crock pot. My favorite is taco bean soup. We use our crock pots so much. We have 3 big ones and 2 smaller ones for dips and sauces.
Yum! So many great recipes can be made in them!
Is this made with fresh chicken or frozen? Going to give it a try tonight and wasn’t sure… :D
What if I just want to throw this in a pan on the stove since I want it NOW??
I made this, it turned out delicious, I did add some crushed garlic, dried onions and some kosher salt. After it was cooked, I added some water and more garlic and salt. Perfect!
I made this last night and it is SO good! I am eating it again for lunch! This is a recipe worth keeping!
Would the cooking time change if you were using frozen chicken?

Two questions, can this be made in the Instant Pot and can frozen chicken be used?
I would say yes to both. I have definitely put frozen chicken in the instant pot, but I have not made this soup in the instant pot yet. It shoul be just fine though. You may need to adjust temperatures.

What do you suggest for cooking time if I didn’t do this in a crockpot, but just used a Dutch oven over the stove?
Kelly- I would say maybe an hour. I would cook the chicken ahead of time though, then add in the other ingredients. Hope this helps. Enjoy.
