Summer at our house is full of birthdays. LOTS of birthdays. We have 5 close family birthdays in May, we recover in June and then we have a birthday every two weeks in July and August. Whew, that is a lot of cake making. I love to make cakes and decorate them for our kids and I always (gasp) use a box cake mix.
Back in February I was at a get together with a few other women in our neighborhood and one of the ladies taught us how to make our box cake mix taste homemade. It was so simple and received rave reviews. (I have come to learn this isn’t anything secret, after some research I have found it floating all around the internet.)
No matter your occasion, you will love this recipe.
You will need…
- Favorite box cake mix.
- 2 MORE EGGS than called for on the box.
- Replace the Oil with BUTTER and DOUBLE the amount.
- Replace the H2O with MILK.
The batter will be thick, almost like pudding.
Bake according to directions.
The final cake will be thick and moist.
So simple and the outcome is bakery delicious right from your own oven. Do you add anything to your box cake mixes, do share.

Do you melt the butter since it is replacing another liquid?
I was wondering the same thing.
Here’s what I found.
Butter, Margarine or Shortening for Oil
You may substitute these fats instead of oil, but you’ll have to melt it and then measure in its liquid form. Also, remember to cool it down before adding it to your favorite mix.

I add a pudding mix, and I substitute 7 up, Sprite or a generic soda for the water.

I use unsweetened natural apple sauce instead of the oil, same measurement as oil. Bake the day before and seal in air tight container (leave on kitchen counter, not in fridge). Day after is more moist than day of baking. Frost and enjoy just maker it’s kept in air tight container.
In adding 2 more eggs, and substituting butter for the oil, can the water be used along with the additional changes vs. the milk?
I would think that would be just fine!

I use chocolate pudding mix, chocolate milk, chocolate chips , oil, eggs and sour cream in the chocolate cake mix

Irma- I usually add 1/2 cup to make the cake more moist.
I also use milk and butter instead of oil and water but I also add a small box of instant pudding mix to the cake mix and beat until it becomes fluffy. The cake comes out so fluffy and moist!

This sounds crazy but I follow the directions on the box and beat it for exactly 3 minutes instead of what the box says (2 minutes). I also take 4 minutes off the bake time and use a toothpick to make sure it’s done in the middle….everyone comments on how moist my cakes are and think I add something. My mom was a baker and passed this info to me….try it…it works!!
