Fall is the perfect time to try new and delicious recipes like this Oatmeal Cranberry Quick Bread. It is the perfect comfort food and makes a pretty great snack too. I love quick breads, because they are just that…quick and easy! This is a recipe that you can also add your favorite add-ins too.
I recently partnered with Nature Valley and thought it would be fun to throw some of this tasty Nature Valley™ Toasted Oats Muesli into the bread along with a handful of craisins. I love the flavor and texture it added to the bread. This mix has Toasted Oats, Cranberries, Coconuts, Almonds and Pumpkin Seeds. All that yummy goodness mixed in the bread makes it extra delicious.
Oatmeal Cranberry Quick Bread
1/2 cranberries (or your choice of add in)
2 cups flour, plus 1 tablespoon
1 cup sugar
2 teaspoons baking powder
1 teaspoon salt
1 cup Greek yogurt
½ cup (1 stick) butter, melted
1 teaspoon vanilla
½ cup Nature Valley Toasted Oats Muesli Mix
- Preheat oven to 375°F. Line a 9×5-inch loaf pan with parchment paper or spray with non-cooking spray.
- In a large bowl, whisk 2 cups flour, sugar, baking powder and salt. In a separate bowl, mix yogurt, eggs, melted butter and vanilla together and then fold into the dry ingredients. Add the oats and gently combine.
- Fill your bread pan with the mixture. Bake for 50-55 minutes and golden brown or when a toothpick inserted into the bread comes out clean. Remove from oven and cool in the pan for 5 minutes then cool on a wire rack.
- Serve warm or at room temperature.
Go ahead and make some! You won’t regret it. If you are able to make some without eating it all, it will also make a great gift idea this holiday season or to cheer up someone who may be feeling down and out.
