I am working on a slew of Valentines Day Crafts and was hoping to have one ready to share with you today, but alas, due to some technical difficulties {having to redo part of it because I was unhappy with it} it will have to wait a little bit longer. It has also been really gloomy here, which makes good picture taking difficult. So bear with me. They are coming shortly :)!
But I thought I would share with you some yummy Pumpkin Waffles we whipped up last week during our Holiday break. This recipe is from my old college roommate Lora! She was kind enough to share it with me. Her family calls them Cinderella Waffles and they are super delicious!
We also whipped up some Cinnamon Syrup to go with them. Ummmm…hello! Cinnamon Syrup where have you been all my life! Have you tried it yet? If not, you are missing out! Go and whip some up right now my friends.
Pumpkin Bread Waffles (aka Cinderella Waffles)
Ingredients:
1 1/2 c. flour
1/4 c. packed brown sugar
2 tsp baking powder
1 tsp cinnamon
1 tsp salt
1 egg
1 1/4 c. milk
1/2 c. canned pumpkin (not pumpkin pie mix)
2 TBSP canola oil
Mix dry ingredients, combine wet ingredients. Mix together. Batter will be thick. Cook in waffle maker. (Use pam to prevent sticking.)
Cinnamon Syrup:
Ingredients:
1/2 cup white sugar
1/2 cup packed brown sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup water
Directions:
1. Stir together the white sugar, brown sugar, flour, and cinnamon in a small saucepan. Stir in vanilla extract and water. Bring to a rolling boil, stirring often. Continue to boil and stir until mixture thickens to syrup consistency. Remove from heat; cool 10 minutes before serving.

*edit–My roomie Lora just informed me that this recipe she gave me were for her Pumpkin waffles {hence the Cinderella nickname} Originally I had said they were Gingerbread Waffles. Lora and I had talked about Gingerbread Waffles too…I didn’t even think about the fact that these were missing an important ingredient…ginger. LOL! Hence the confusion with the name. I have changed the name to Pumpkin waffles. Really…all you need to know is that they a DELISH! Sorry for the confusion. I’ll blame it on hormones :)

@Michelle and @Aimee–You were right. These are Pumpkin Waffles not Gingerbread Waffles. I just confused the two. My roommate who gave me the waffles and I talked about both when she gave me the recipe. This is the Pumpkin recipe. Sorry for the confusion. I need to stop writing these posts at the end of the day when I am tired. I have made the edits. Thanks for pointing that out LOL!

@Vicky–Great Question! I doubled it {waffles and syrup} for my family of 7. It was just about perfect. And we had some syrup to spare.

These were delicious! The syrup was wonderful too! Great on a snowy day.
Saw this and new I had to make them for my kiddos this morning. We are all Gluten and dairy free around here but no problem. Just figured out the substitutions and they were fantastic. Perfect for an icy cold day.

I normally hate anything pumpkin . . . but I made these for my kids this morning to sneak in some veggies for them and I decided to give it a taste since they smelled so good. They are DELICIOUS. I guess I may like pumpkin after all – but I'll never eat pumpkin pie – the texture and look just aren't appealing to me. I haven't tried the cinnamon syrup yet, but I'll definately try that this weekend. Thanks for the recipe
