Coconut Poke Cake Recipe

Ingredients

  • 1 BOX white cake mix
  • 1 cup milk
  • 1/2 cup unsalted butter softened
  • 3 large eggs
  • 1 14 oz. can sweetened condensed milk
  • 1 16 oz. frozen whipped topping thawed
  • 2 cupS sweetened coconut shredded

Instructions

  1. Preheat oven to 350 degree F. Grease a glass 9 x 13 baking dish with baking spray and set aside.

  2. In a large mixing bowl, beat a white cake mix with milk, butter and eggs on low speed until moistened.

  3. Beat for 2-3 minutes longer on medium speed until well blended, scraping down the sides of the bowl as necessary.

  4. Pour cake batter into prepared baking dish.

  5. Bake for 35-40 minutes until golden brown on top. Remove from oven and immediately poke holes all over the cake, using the end of a wooden spoon handle.

  6. Pour can of sweetened condensed milk slowly over the top of the warm cake, using a spatula to spread it evenly as it falls into the poked holes. Cover with plastic wrap or foil and refrigerate for at least 2 hours.

  7. Frost the cake with thawed whipped topping. Sprinkle coconut generously over the top.

  8. Refrigerate leftovers.
