Strawberry Lemonade Slush


Summer! Who doesn’t love summer?  One of my favorite parts of summer is drinking ice cold drinks and eating popsicles.  I have never made my own Strawberry Lemonade, even though it is one of my favorites.  Why not?  I have no idea…but decided it was time to test out a recipe.  I came up with this really yummy Strawberry Lemonade Slush.


My whole family gave this recipe a thumbs up.  I like it because it is just tart enough but not too overpowering.  If you like a tarter drink, add more lemonade concentrate or less water.


Strawberry Lemonade Slush

8 oz. Fresh Strawberries (washed & hulled)

1 cup of ice

1/4 cup of frozen lemonade concentrate

1 cup of water

mint leaves (optional)

Throw all the ingredients, except for the mint leaves into a blender.  Blend together until slushy and smooth.  Pour into drink glasses and serve immediately.  Garnish with mint leaves if desired.  Serves 4.



This drink would be fun to serve at a BBQ or for your Fourth of July Picnic.  It would also make a great drink for your shower or birthday party.  Or, if you are like me…you want to drink it on an ordinary day while sitting on the back porch watching the kids play outside.

Strawberry Jam & Ball Jam Maker giveaway

Fall is in the air people…and this makes me a bit giddy.  The kids are back in school and the last couple of days have been rainy and cool here.  So what was a gal to do?  Make some Strawberry Jam.


I was recently contacted by Ball to see if I would be interested in reviewing and giving away one of their Jam Makers.  I love making Jam and usually make some every fall for my family.  So, of course I was intrigued in testing this Jam Maker out.


I have to say that I was super pleased with the design of the Jam Maker and how easy it was to use.  It really couldn’t be any simpler and I thought it worked extremely well.  There are three different ways you can choose to prepare your Jam or Jelly…

1. to use immediately and store in the fridge for up to 3 weeks

2.  to freeze as a freezer jam

3.  to cook and then prepare in a canner so that you can store in on a shelf for later use


I decided to go with the third option and see how well it worked for making Jam that I could save for later use.   The Jam Maker cooked the Jam till it was piping hot and I prepared my jars as directed.


The Jam took 21 minutes to cook and then filled two 16 oz. Ball Blue Heritage Vintage Jars perfectly.  I then finished cooking them in a canner bath.  The Jam jars sealed perfectly.


The Jam Maker really made it so simple and easy.  I am excited to make some other Jams with it and am thinking that Peach Jam is next on my list.

The Jam Maker does not make a large batch, but was perfect for making a smaller batch of Jam.  I think it would be perfect for someone who is new to canning and may be nervous to learn how on their own.  You really can’t make a mistake with this Jam Maker.  It takes all the guess work out of the jamming process.

And?  The Jam tastes so much better than the store bought versions…Like SO much better!

Strawberry Shortcake {Grain & Gluten Free}


Hello Again, Idea Room Readers!!!

It’s me Angelina from JoJo and Eloise. I am so happy to be back here with you. Today I will be sharing another Healthy Treat with you. Some of you may remember the Honey Sweetened, Lemon Curd that I shared, last time I was here.

Well, today I am going to show you how to make a Gluten and Grain Free Strawberry Shortcake.

And, guess what?

I use that very same Lemon Curd to add a little Sweetness to this Strawberry Shortcake.

I PROMISE you!!! Even those who don’t eat a Gluten or Grain Free diet, will be asking for more.

So how about we get started on this Yummy Dessert of ours.

Here’s what you’ll need:

1 cup of Coconut Flour

3/4 Organic Plain Yogurt

7 pastured/Organic eggs

1tsp bkg soda, 1 tsp salt, 1tbs Organic Vanilla Extract

1/2-3/4 cup of honey

6 tbs of Organic/Pastured Butter


Place ALL your ingredients in a Food Processor and Blend until, all your ingredients are combined.


Your Batter will be Light and Fluffy.

The Coconut Flour naturally absorbs the liquid and can be very dry. So that’s why you use the High egg Count. You can cut the amount of eggs down and replace with more Yogurt. However I wouldn’t use less than 5 eggs for this recipe.

Substitute 1 egg for 1/3 cup yogurt.


Fill your Muffin tin and Bake at 350 for 20-27 minutes. Depending on your oven temp. You can toothpick test your center’s.


Once my Muffins were done. I let them cool and sliced them down the center.

I washed and cut some fresh Organic Strawberries, then placed a NICE spoonful of some delicious Lemon Curd as well as some homemade Coconut Whipped Cream. You can see how I did that here.



This dessert isn’t just for those who have food allergies or intolerance’s. This is a Dessert for those of you who are looking to make Healthier and Wiser choices for you and your family!

Gooey Strawberry Bars Recipe—Lil’ Luna

Today, I will be sharing with a fun, summer recipe. In the summertime, I am always craving fruits and anything fruity. Well, I decided to change an old family favorite and made some Ooey Gooey Strawberry Bars. The result was AH-MAZING!! If you like gooey goodness and strawberries I think you will agree. :)

Ooey Gooey Strawberry Bars. These are so good and gooey! #strawberry

Here is the recipe for these delish Gooey Strawberry Bars:




- 1 box strawberry cake mix

- 1 egg

- 1/2 cup butter (melted)

- 8 oz. PHILADELPHIA Cream Cheese (1 bar)

- 2 eggs (beaten)

- 2 cups powdered sugar

- Sliced strawberries



1. grease a 9×13 pan and turn oven to 325.

2. blend cake mix, 1 egg and butter until smooth. press into your greased 9×13 pan.

3. blend cream cheese, 2 eggs, and powdered sugar until creamy and smooth. spread over your the first mixture in your pan.

4. bake at 325 for 40-45 minutes or until edges are golden brown (middle may sink in a bit).

5. top with powdered sugar and sliced strawberries.
