A couple of days ago I shared with you a recipe for some delicious Peppermint Chocolate Chip Pancakes. Did any of you end up making them yet? I think you will really like them. I think we will make them this year for our Christmas Breakfast.
That got me thinking that it might be fun to give the gift of pancakes to your friends and family. How fun to have some easy, festive and delicious Christmas Pancakes right from a Pancake Mix in a Jar.
The Gift in a Jar is not a new concept…but I always love a super cute, yet practical gift idea. And because of their popularity, I am guessing many of you like them too. And…with very little preparation, you can create these for a lot of different people.
All you will need to do is take a quart size Mason Jar and sterilize it in the dishwasher. Be sure the jar is completely dry before adding your ingredients. You don’t want to get the flour wet or it will not be as pretty and can introduce bacteria before the recipient uses the Pancake Mix.
Layer the following in your Jar in the order that they are listed.
- 3 cups all-purpose flour
- 2 Tbsp. baking powder
- 2 teaspoons salt
- 2 tablespoons granulated sugar
- 1/4 cup Andes Peppermint Baking Chips and/or crushed candy canes (optional)
- 1/4 cup Chocolate Chips (optional)

Now…you may notice that the labels in the images are slightly different than the downloads. Well…I left something out and had to fix it and made a few changes. But…I didn’t notice until after I took the photos…and edited them. So…I just left them. I might get around to re-taking them…and then again…I might not!

It makes about 20 medium pancakes.

I love this idea! The last night of a workshop I’ve been attending is tomorrow night, and I am making these for the two awesome facilitators. I’m not sure if they will like the crunch of candy canes in their pancakes, so I am going to substitute chopped Hershey peppermint candy cane kisses. I’m hoping they’ll be little bits of melty peppermint goodness!
I just made this Jar for my mom….and was wondering (a little too late)… we don’t need baking soda in this recipe right? I didn’t see it listed. I’m hoping you tell me “No”.
