Summer time is a great time to make this fun watermelon pancake recipe. I have a super simple pancake recipe for you to follow so that you can whip some up for your family to enjoy on these lazy summer mornings…or for a lazy summer dinner!
I used our favorite buttermilk pancake recipe…
2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups buttermilk
1/2 cup milk
1/4 cup unsalted butter, melted
Instructions: Combine the flour, sugar, baking powder, baking soda and salt in a large bowl.
Lightly beat the eggs with the buttermilk, milk and melted butter.
Just before you are ready to make the pancakes, add the liquid ingredients to the dry ingredients all at once, stirring just long enough to blend. The batter should be slightly lumpy.
If you want to add fruit or nuts, stir them in now, or you may sprinkle them on the pancakes while they are on the griddle.
Heat a lightly greased griddle or heavy skillet over medium-high heat (375 degrees on an electric griddle).
Separate the pancake batter into three different bowls. Pour half of the batter into one bowl and then split the other half between the two other bowls. Add red food coloring to the bowl with half of the batter. Then in the other bowls add green food coloring to one and leave the other bowl white. Pour a thin line of green in a half circle. I used a spoon and just dribble the batter into a line. I followed suit and added a thin line of white right next to the green. Fill in the rest with the red batter. It doesn’t have to be perfect. I trimmed them with my kitchen shears later. Then I sprinkled some mini chocolate chips into the red batter. Then when the pancake is ready, flip it over and cook the other side.
You don’t need to worry about adding more chocolate chips to this side unless you want to. This side will not be as pretty, but just place that side down on the plate and no one will be the wiser!
Serve them up with your favorite syrup and enjoy!
You know you want some! Who knew breakfast foods could be so much fun to eat?

I read a blog from a girl who does pretty ornate pancake art (http://jennipriceillustration.blogspot.com/) and she uses those clear ketchup/mustard bottles to squeeze out the batter. I really need to get some! You can see the bottles here ~
What a fun idea! They are too cute!
Thanks Katie! I even enjoyed eating them and I am not a huge pancake fan. I think the cuteness and chocolate chips won me over :)

Cutest thing I’ve seen in a LONG time!
Thanks Christy! That means a lot!
I want to try this! Except I think I will make them all full circles, and then cut them in half, since you have to trim then anyway.
Shayla–Great idea! That probably would save some time and make them go faster!
I have said it before, and I’ll say it again. You are the cutest mom ever! What kid wouldn’t want to gobble those up! Darling :)
Awww…thanks Stacy! You are too kind. Just a regular mom who likes to play with her food!
Very cute idea!

These are SO, SO, SO cute!! I absolutely LOVE this idea! Do you have one of those ‘pancake pens’ from Williams Sonoma? I love mine! Google ‘pancake pen’ and it will come right up. Thanks for all your adorable ideas!! Love your blog!!
Thanks Candi! I have not seen the pancake pens but I will have to check them out. Sounds like fun!

This is going on the list for my next “Day with Aunt Steph”! In love being the cool aunt.
Pancake Pens! You must get one (or two or three with multicolored pancakes). I got mine at Williams Sonoma…my MIL found hers at Cost Plus World Market. They work great at filling perfect cupcakes too!

Thanks for linking up! I featured your post in my wrap up http://tidymom.net/2011/great-ideas-3/ Have a great rest of the weekend!
I made these this weekend, and they were a huge hit! I made enough to freeze, and put a few in my girls’ lunches today. I’ve posted it on my site and linked back to you. I made them as a whole circle, then sliced them in half. What a great tutorial!
