This cookie recipe is one of my personal favorites. I LOVE coconut...like a little bit borderline obsessed with coconut. If you love coconut, you might want to give these Chocolate Dipped Coconut Macaroons a try.
Using a cookie scoop or two spoons, drop rounded, heaping spoonfuls (about tablespoon-size) of the coconut mixture onto the prepared baking sheets about 1-2″ apart.
Bake on 350 degrees for about 12-15 minutes or until golden brown and lightly toasted.
Let cookies cool on the pan for a few minutes, then transfer to a wire rack to cool completely.
Melt chocolate in a microwave-safe bowl, pause at 30 second intervals and stir until smooth.
Dip the bottoms of the macaroons into melted chocolate and let harden before serving2.
