CINNAMON SWIRL PANCAKES
One of my favorite food flavors is cinnamon! I love it on so many different things…so why not enjoy it with one of our favorite breakfast foods…Cinnamon Swirl Pancakes! Seriously! These are like eating a warm and gooey Cinnamon Roll right out of the oven…without all of the work! And it passes for breakfast…I call that a win!
This recipe has been a family favorite for years which was passed down to us when we were first married by some of our good friends. We had spent the weekend with them on a little trip together and they made these Cinnamon Roll Pancakes for us one morning! Life changing I tell you!!
HOW TO MAKE FLUFFY PANCAKES
There are some tricks to making your pancakes a little more fluffy. Try these tips if you feel like your pancakes usually tend to come out a little flat.
- make sure you use a leavening agent that is fresh and not stale
- use cake flour instead of regular flour
- sift your dry ingredients together
- use a whisk to whip up the batter but don’t over-mix it; small lumps may remain
- add a few drop of lemon juice if your leavening agent is baking powder
- let batter sit in the bowl for a little bit so the leavening agent has a chance to rise
- use a girdle instead of a skillet
SUBSTITUTIONS FOR BUTTERMILK
This recipe calls for buttermilk and while I prefer real buttermilk to substitutions, you can make a simple substitution if you need to and find yourself out of buttermilk. Sometimes you don’t have time to make a trip to the store for those special ingredients. These pancakes are still delicious with this simple sub.
To make the substitution simply add 1/4 tsp of white vinegar to milk. Pour the vinegar directly into the milk and let sit until the milk begins to curdle. Then add that milk to your pancake batter and mix in the other ingredients as instructed.
HOW TO MAKE CINNAMON ROLL PANCAKES
These pancakes are not as hard to make as they may look! But you do need to prepare a little bit in advance and have a couple of the right tools to make these as easy as possible. You will want to make the Cinnamon Swirl Mixture before you start making the actual pancakes and then set it aside. We put our cinnamon sugar mixture into a squeeze bottle like this one so that it makes it easy to add the swirl to your pancake.
We find it best if you pour the pancake batter onto a hot griddle (about 350 degrees) and spray the griddle between each set of pancakes. You will also have a little bit better success scraping the pancakes off the griddle with a thin spatula as opposed to a thicker one. Does that make sense?
Mix all the wet ingredients and the dry ingredients together to make the pancakes and set aside. Preheat your pan or skillet and lightly grease it.
Make the Cinnamon mixture and place it into a a small bottle with a squeeze bottle or a small baggie with a snip in the corner.
Pour your batter into small pancakes on the griddle. Immediately add the cinnamon swirls.
Cook the pancakes until small bubbles form on the topside of the pancake and do not fill back in with batter.
Flip over the pancakes with a turner and cook for another 30 seconds to a minute on the other side.
HOW TO MAKE GLUTEN FREE CINNAMON ROLL PANCAKES
To make this Gluten Free, you can substitute the regular flour with an all-purpose Gluten Free Flour. We love’s Bob’s Red Mill Cup for Cup Flour. Then just add the buttermilk until you like the consistency of the pancake mix. For a thicker pancake use less buttermilk.
HOW TO STORE PANCAKES
Pancakes actually store really well after they are made. Let them cool and then place them into an airtight bag and store in the fridge for up to a week. You can reheat them on a skillet rather than in the microwave for best results.
CAN I FREEZE CINNAMON ROLL PANCAKES?
These pancakes can also be frozen to but pulled out at another time. Simply store them in the freezer in airtight freezer bags. Pull them out and pop them into the toaster to reheat for a quick breakfast! They can stay frozen for up to 6 weeks for best taste and results.

- 4 Tbs butter
- 1/4 cup sugar
- 1 cup milk
- 1 tsp pure vanilla extract
- 1/2 tsp baking soda
Instructions

In a medium sauce pan, combine butter, sugar, and buttermilk. Set over medium heat and bring to a boil.

Reduce heat to low and allow to simmer for 10 minutes, stirring occasionally.

Take off heat and stir in vanilla and baking soda. Stir, and the mixture will become thick and bubbly.

We made these this morning and they were great!! The kids asked for THIRDS, which never happens – though my husband commented this meal was "more cake than pan." We used the old lemon juice and milk trick to make the buttermilk and everything turned out fine. Also, I had to double the recipe for the cinnamon swirl in order to have enough for all the pancakes.
