Easy dinner ideas are always a favorite of mine! We are in a busy season with our growing family and we need meals that are fast and easy like these Instant Pot Chicken Tacos! So lately, I have been using the Instant Pot…a lot! I love how I can have dinner ready to go in 30 minutes! Sometimes that is all the time we have together before one of us, heads off to soccer or lacrosse practice.
CHICKEN TACO RECIPE
Our family loves eating our shredded chicken taco recipe on Taco Tuesday. I usually can throw them together and have all the ingredients on hand. This is also an easy gluten free dinner recipe to make for the family because we are now a household that has to accommodate a child with Celiac Disease.
I love making meals that can easily be adapted so that I can feed kids that have different dietary needs. This shredded chicken is also super versatile in the way that you can serve it up. For example, we usually serve it with corn or flour tortillas and top it with our favorite taco toppings. But…you could also serve this chicken on the top of a delicious salad, or over some tortilla chips! You could also roll them up and turn them into some chicken wraps, quesadillas, or burritos!
INSTANT POT CHICKEN TACOS
Instant Pot Chicken Tacos Recipe
- 4 chicken breasts
- 1/2 cup salsa
- 1 TBSP chili powder
- salt and pepper to taste
Turn instant pot onto high pressure setting for 15 minutes.
Place frozen chicken breasts in the bottom of your instant pot.
Pour the salsa and chili powder over the chicken.
Add salt and pepper to the chicken for your own taste preferences.
Place on the lid and seal the instant pot shut.
Cook for the 15 minutes and then let the instant pot natural release for 10-15 minutes.
Release any left over pressure by using the quick release valve.
Take out chicken breasts and shred your chicken between two forks.
Place shredded chicken back into the juices.
Add shredded chicken to your tortillas and top with your favorite toppings!
*These cooking times are for frozen chicken breasts. If you chicken is not frozen, take about 5-8 minutes off the cooking time depending on how thick they meat is.
