I am so excited to be here with you at the Idea Room. It was such a treat to meet Amy in person at SNAP. If you already know her than I don’t have to tell you how Sweet she is, but if you have never met her then let me tell you she is as REAL as they come. In our conversation we got to talking about FOOD. YUM, right?? Well for some people it may not be all that YUMMY. Not because they don’t enjoy or like food but mainly because they are limited.
Limited in options, due to food intolerance’s and allergies. This is increasingly becoming the norm, whether it be, You, someone in your family, a friend or a friend of a friend. We are all effected by this growing epidemic in some way or another.
But, how about we look at it from a whole other perspective. (minus the food allergies)
HEALTH!!
Your health, my health, our kids health. I know that this can seem a bit overwhelming and intimidating. How do I know this? Because I once felt the same way. I looked at it with a HUGE overhaul in mind. I never thought or considered slowly adjusting recipes (one at a time) giving me and my family time to get use to it. When I finally realized it, the task of eating Healthier became much more Doable and even FUN!!
Today I am going to show you how to make, Organic Lemon Curd that is Sweetened with Honey.
Keep in mind that if your allergic to anything in this recipe, you can always find alternatives. Just experiment and have fun.
Here’s What I did:
I juiced 1/2 cup of fresh Organic Lemons (4-6 lemons)
1/4 -1/2 cup Honey
1 stick of butter ( 8tbs )
1/8 tsp salt
4 Pastured/Organic eggs and 2 yolks
2 Tbs Lemon Zest
(it’s important for your ZEST that your lemons be Organic, to limit the amount of pesticides )
Whisk all your ingredients together MINUS the butter.
In a double boiler melt your butter on low to medium heat.
Once your butter is melted SLOWLY pour in your Liquid mixture, Whisking Constantly! Continue to whisk until thickened 5-8 minutes.
Strain your Lemon Curd through a fine mesh strainer/sieve, to strain out your ZEST.
Work it back and forth with a spoon.
My Kids LOVE doing this part, they like eating the leftover Lemon Zest. Crazy, I know!!
And, what you will have left is a SMOOTH Lemon Curd.
Sweetening your Lemon Curd with Honey lessens the sugar content and makes for a healthier alternative.
My kids enjoy using a Spoonful of lemon curd in there PLAIN Organic yogurt for an added treat. They also love adding it to their Fruit Salads.

I found this interesting cause I do enjoy lemon curd, but making it with honey certainly doesn’t make it any healthier. In fact, honey has more carbs than white sugar! Maybe using something like Swerve would reduce the carbs and make it healthier…
