As promised, here is the zucchini bread recipe we love to use. If you are like us…your garden tends to be overrun with zucchini and you need to have some great recipes to help you use it all up.
BREAD RECIPE
We have tried a few different recipes out there and we tend to keep coming back to this one. One of the main reasons I love this zucchini bread recipe is the replacement of applesauce for the vegetable oil. It add some moisture to the bread which can sometimes be a problem with quick breads. By replacing the oil with applesauce, you cut down a lot of calories and this becomes healthier and nutrition wise. You can also try adding some nuts such as walnuts, cranberries or raisins. If you want a more chocolatey taste and flavor you can add some chocolate chips or try our Chocolate Zucchini Cake Recipe.

HOW TO MAKE ZUCCHINI BREAD
INGREDIENTS:
- granulated
- shredded
- all purpose
- ground
INSTRUCTIONS:

Pre-heat oven to 350 degrees.
-
Beat three eggs together in a medium bowl or large bowl with a mixer.

Add in applesauce, sugar and vanilla and beat or whisk until it is foamy.

Stir in the dry ingredients and grated zucchini .

Grease and flour loaf pans.
-
Pour batter into two regular size loaf pans or 3 mini loaf pans.

Bake at 350 degrees for 45 minutes or until a clean toothpick inserted in the center of the loaf comes out clean. Remove from oven and place on a wire rack to cool.

Makes 2 Loaves of bread. About 30 slices. You can wrap the bread up in plastic wrap and aluminum foil and put in the freezer.

Hey Marybeth. The recipe calls for 3 cups of flour. The extra 1/2 cup is needed if you substitute the applesauce for the oil. Sorry for the confusion.
I doubled the recipe added walnuts and dried cranberries. 1/2 brown sugar, 1/2 white sugar ..it’s fantastic!

Just made this. I love the exchange of applesauce. I actually halfed the amount of flour and substituted it with oatmeal and halfed the sugar amount and substituted it with honey. Hopefully it’ll work out great!

Made this recipe today, used oil instead of applesauce. Made one batch which yields 2 regular pans of zuchinni bread, and when my family gave it the thumbs up I made another double batch. Thanks for a great, and easy recipe, everyone loves it!!

Yes, you should be able to put them into muffin cups and they should bake the same. That sound yummy! I will have to try it out myself.

I substituted 1 cup of sugar for brown, and still used 1 C white sugar. I used the applesauce. I did 2 C flour, 1 C oats. One loaf i added Blueberries and the other I left plain. The plain loaf didn’t rise. But the flavor was good!
