This fresh pineapple salsa recipe is a great way to indulge in the beautiful fruits of summer. With is special secret ingredient, your guests will fall in love and ask for more!
The last time I was in Hawaii, I went out of my way to visit the Dole Pineapple Plantation… EVERY DAY! Yep, every day I would drive 40 minutes from Waikiki, escaping the hustle and bustle of crazy Honolulu to drive through the lush pineapple fields. It was during harvest and I would sit and watch the workers, cut the pineapple from their plants and place them on a conveyer belt to be loaded up into these huge trucks. When the trucks were full, they would drive into the processing area and they would unload the trucks. Mountains of pineapples with spill out of these trucks and my mouth would water. I would go and walk the plantation grounds and indulge in a Dole Whip and then explore all of the different varieties of pineapple. Yep, there’s more than one. They come in all sizes and you can even find a PINK pineapple variety. It’s so cool! Needless to say, I have a pretty strong affinity for pineapple and I’m always looking for fabulous recipes to create with one of my favorite fruits.
Recently, my daughter celebrated her 13th birthday and naturally we decided to celebrate with a Pineapple Party because, who doesn’t love to Party like a Pineapple!
We had “pineapple” doughnuts, Dole Whips & pineapple salsa with cinnamon sugar pita chips and they were all a hit. Who knew a whole gaggle of 13 year old girls love pineapple as much as Em and I do! Thanks to sweet Amy, I have the opportunity to share my pineapple salsa recipe with ya’ll.

Ingredients
2 cups fresh diced pineapple
1 1/2 cups fresh diced strawberries
1 cup fresh blueberries
1 tablespoon Tajin – Tajin is a chili blend that you can find at your local market in the Hispanic section
2 tablespoons fresh lime juice
1 tablespoon honey
Instructions:
1.Dice the pineapple and strawberry into pretty small bits. You want your guest to be able to get little bits of each fruit in one bite. Think typical salsa and dice them small. Keep the blueberries whole. If you dice them, it will give your salsa a color that you may not be too happy about.
2. Add the Tajin. Tajin is a chili blend that is a staple in Mexican households. Perfect for fruit and vegetables and it truly shines in this salsa.
3.Next, add the lime juice and honey and stir the mixture together.
You can either serve the salsa in a bowl with some cinnamon sugar pita chips OR if you’re feeling the pineapple vibe, hollow out a pineapple half and use that as your bowl.
How fun is that? If you happen to have any left over… It’s out of the world amazing in your smoothie the next morning!
