Want me to share with you one of my favorite things to eat for breakfast or a late night snack? Yogurt and fresh fruit parfaits!!
Yum! Have you ever had one? If not, you are seriously missing out on some yummy goodness. And they are so easy to make. All you need is some yogurt. I personally like Vanilla Yoplait yogurt that my local grocery store sells in a large tub. I also love to add frozen fruit from Costco which contains a mixture of freshly frozen raspberries, blackberries and blueberries. I also will sometimes just use some fresh raspberries…really anything will work. You can even used bottled or canned fruit. I personally like the iciness that the frozen fruit gives the parfaits. Then finally throw in some granola. I have used granola with pumpkin seeds in it which I also buy at Costco. But I recently made some Homemade Granola a few weeks ago with my mom and sisters.
It turned out really great and was a hit with everyone in the family!
Here’s the recipe:
6 cups rolled oats
1/2 cup brown sugar
1 cup coconut
1/3 c. sesame seeds
1/4 cup sunflower seeds
1/2 cup dried cranberries (or dried cherries are extra yummy)
1 cup almonds (sliced or whole – you decide how chunky you want it)
Mix all ingredients together except for the craisins.
In a separate bowl, whisk together:
1/2 cup oil
1/3 cup honey
2 tsp. vanilla
Pour over dry mixture. Stir and coat thoroughly.
Spread on a cookie sheet and bake at 350 degrees for 30 min. Stir frequently to insure even baking. Add craisins or any other dried fruit you’d like during the last 5 min. of baking. It is important to watch this baking process very carefully. The cereal should be golden brown. Do not over-bake.
Makes 8 cups. {We doubled the recipe so that we could share it!}
When your granola is ready, you can whip up yourself one of these delicious Parfaits. Enjoy!

I noticed that your ingredients picture has a bottle of wheat germ, but it’s not included in the recipe? :)
Oh yeah! It was not in the original recipe but we added a couple of Tablespoons just to give it a little boost! I usually throw wheat germ in a lot of my recipes. That was a great question! Thanks for asking so I could clarify that for others too.
This is similar to what I eat every morning for breakfast. It’s delicious!

This looks so good! How is the best way to store the granola, and when is it best used by?

It should last just fine for a few weeks. If you don’t think you will eat it that quickly you could always store it in your fridge or freeze it till you need it.
Can you use quaker oatmeal, or does it need to be something special?

I was reading above and you mentioned that you use flax seeds a lot. I was given a huge bag and I am not sure what to do with it. Can you send me some suggestions maybe even a few recipes/directions on how to incorporate it?

I pretty much throw it in a lot of recipes like breads, cookies, oatmeal and on top of cereals. I have even put some in soup and my kids never notice it! :)
YUM! I made homemade granola a year or so ago and was so excited about it and my hubby said it tasted sorta stale. Boo on that one.

Yum…We have been using our home-aid granola on top of whole wheat pancakes, with syrup and bananas!! So, so good!
I have wanted to make homemade granola for a long time now. It looks so good! And I love a good fruit and yogurt parfait, though I prefer it when someone else prepares it for me. ;) But now you have me thinking it’s about time I made my own!
I love pretty & delicious food and this is both. One of my favorite breakfast treats too!
I often eat it for lunch as well.
