FRENCH FRIES
One of my very favorite things to indulge in are french fries. When I was pregnant with my first child, years ago (sigh), I couldn’t get enough of them. Years later, I still love a crispy french fry…don’t you? So when I was challenged by Alexia® to create a recipe using Alexia’s Crispy Rosemary Fries, I knew I had to make some Parmesan Fries! It was a no-brainer really.
And do you know what I love? I love that I could bake them and still get a great, crispy texture without having to fry them in oil. Alexia uses all-natural, real ingredients that you can trust. And like Alexia’s mantra…”we enhance Mother Nature with more Mother Nature,” I used some of our own homegrown herbs. How fancy is that?
ROSEMARY FRIES
These Rosemary Parmesan Fries can be whipped up quickly with ingredients you have on hand. Perfect for serving to guests who you are trying to impress, or for a late night snack to eat all by yourself! Either way, they bake up so flavorful and crispy.
HERB GARDEN
Before I share the recipe with you, I want to share with you my cute little windowsill herb garden. I have grown herbs in our backyard garden before, but wanted to grow some herbs indoors. I have the perfect south facing window that gets great sunlight and has the perfect ledge for some plants.
The kids and I planted some of our favorite herbs in some old tin cans, but you can use any container that you want.
You can grow your herbs from seeds or get some small plants from the nursery and plant them into your container or pots. Simply fill the can with some planting soil and then add the seeds or the plant. Be sure to keep them in a warm spot full of bright sunshine. Water them enough to keep the soil moist.
GARDEN MARKER
The kids also made some herb markers so we would know what each of the herb plants were. We did that by simply taking some wooden craft sticks and placing some letter stickers on them to spell out the herb name. Finally, paint the stick with a sealant so that the water doesn’t damage it.
Now, the kids beg to help with the cooking so they are the ones who get to harvest the herb plant when a recipe calls for it.
I love having the herbs in my home rather than the garden for two reasons, first, I don’t have to go all the way out to the garden to grab them, and second, they are so pretty to look at! How fun and colorful is my window now?!
ROSEMARY PARMESAN FRIES
Now…back to those fries…I know you want to make some. Here is the recipe:

Rosemary Parmesan Fries
Ingredients
- 2-3 large handfuls of frozen Alexia Crispy Rosemary Fries
- Salt to taste
- 1/4 cup freshly grated parmesan
- 1 Tbsp. fresh rosemary chopped
Instructions

Bake your fries according to the package directions.

Once golden and crispy, remove from oven and immediately toss with salt, fresh rosemary and parmesan.
GARLIC AIOLI
Sharing how to make the delicious sauce in the photos too! You will definitely want to make this dipping sauce!

Garlic Aioli
Ingredients
- 1/4 cup mayonnaise
- 1/4 cup greek yogurt
- 2 cloves garlic minced
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- Lemon zest
Instructions

Whisk together the mayonnaise, yogurt and oil.

Stir in the garlic, lemon zest and salt and pepper.

Cover and place in fridge for at least 30 minutes before serving.
