With my many food allergies, I have been experimenting with some different recipes and food combinations. I am trying to find some tasty and quick dinner options that I can eat without feeling “heavy” or sick afterwards…. This Shrimp Scampi with Zucchini Noodles recipe I am sharing with you today was super tasty. My husband and a couple of the kids wanted to eat the leftovers for their own dinner. I would say that speaks for itself!
Have you ever tried Zucchini Noodles? They are super tasty and I have been surprised at how much I actually like them! They are a pretty good pasta substitute if you crave pasta and are unable to eat it or you are trying to eat less carbs.
They are so easy to make. All you need is a vegetable spiralizer, and you can whip them up in minutes. And, most people have an abundance of zucchini this time of year around here from their gardens.
Shrimp Scampi with Zucchini Noodles
2 Tablespoons butter
1 pound medium shrimp, peeled and deveined
2 cloves garlic, minced
3 Tablespoons of Chicken Broth
Juice of 1 lemon
salt and pepper, to taste
4 medium zucchini, spiralized
2 Tablespoons freshly grated Parmesan
2 Tablespoons basil (or parsley) leaves, chopped
- Melt butter in a large skillet over medium high heat. Add shrimp and garlic. Cook until pink, about 2-3 minutes.
- Stir in chicken broth and lemon juice; season with salt and pepper, to taste. Bring to a simmer; stir in zucchini noodles until well combined, about 2-3 minutes.
- Serve immediately, garnished with Parmesan and parsley, if desired.
