BREAKFAST CASSEROLE
Have you ever needed a great, go-to EASY Breakfast Casserole? This is ours. We love this recipe. The family loves it because it tastes great! I love it because it is so easy to make and can be thrown together in a pinch. The hardest part is cooking your bacon. Then you basically mix it together and throw it in your oven.
BREAKFAST RECIPE
This recipe is perfect for when you have family and relatives spending some time with you and you need a quick and easy breakfast recipe to feed lots of hungry mouths at once. It is also great for a lazy weekend morning.
HASHBROWN BREAKFAST CASSEROLE
No more making an individual breakfast for every family member. This one is sure to be enjoyed by even the most pickiest eater. If you don’t like bacon, you can always substitute it for a different protein like diced ham or sausage…or leave meat out all together. I also like to throw in different veggies that I have on hand and it turns out great!
Quick Breakfast Casserole
Need An Easy Breakfast Casserole? Breakfast Casseroles Make Feeding The Kids Or A Crowd So Simple While Still Tasting Great! Our Quick Breakfast Casserole Is A Tasty Combination Of Bacon, Cheese And Hash Browns!
Ingredients
- 1 pound sliced bacon diced
- 1 medium sweet onion chopped
- 6 eggs lightly beaten
- 4 cups frozen shredded hash brown potatoes thawed
- 3/4 cup swiss cheese
- 2 1/2 cups cheddar cheese
- 1 1/2 cups small curd cottage cheese
Instructions

In a large skillet, cook bacon and onion until bacon is crisp; drain. In a bowl, combine the remaining ingredients; stir in bacon mixture. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish.

Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
