BREAKFAST CASSEROLE
This Cinnamon Roll Breakfast Casserole is the perfect breakfast for your busy Christmas Morning Celebration. Christmas Morning can come super early in some households and some of you may not want to spend all morning in the kitchen making a Christmas Breakfast for your family.
OVERNIGHT BREAKFAST CASSEROLE
This Cinnamon Roll Casserole is an easy overnight breakfast casserole recipe that can be made on Christmas Eve (or the night before you need to eat it). Then you simply cover it (before baking) and let it sit overnight in your refrigerator for about 6-8 hours. Overnight the rolls will rise and will be ready for you to bake it when you wake up.

Cinnamon Roll Casserole Recipe
A Breakfast Casserole is the perfect way to feed a crowd, especially if it's an overnight breakfast casserole. Our Cinnamon Roll Casserole is an easy and delicious breakfast recipe!
Ingredients
- 1 pkg frozen Rhodes Cinnamon Rolls about 12 rolls, cut into pieces
- 4 eggs
- 3/4 cup milk
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 ½ teaspoon vanilla
- Cream Cheese frosting from cinnamon roll package
Instructions

Grease a 9x13 pan.

Cut up the rolls into small pieces and lay in the pan.

In a bowl, whisk eggs, milk and spices.

Pour over rolls making sure they are all well coated.

Cover the baking dish with plastic wrap and refrigerate overnight, at least 6-8 hours. Rolls will thaw and rise.

Preheat oven to 375 degrees.

Bake the French toast for 35-40 minutes or until the rolls are well browned on top. If the rolls are getting too brown before being cooked all the way, cover with foil and continue baking.

Remove from oven and frost with the cream cheese frosting from the cinnamon roll package Drizzle maple syrup if desired.

I really really want to make this but I have no idea which bag of Rhodes you are using. Unfortunately outside of Utah the choices are limited and I don’t want to get the wrong ones. Please help :)

Do you thaw or let the rolls raise before cutting them up?
Jenny, you cut the rolls while they are frozen and then they will thaw and rise by morning.
1. Directions say bake the French toast, I thought they are cinnamon rolls?
2. We don’t have Rhodes Ciinnamon Rolls here, what can I substitute?
Caro- Yes, they are cinnamon rolls. Sorry for the confusion. If you have any brand of cinnamon rolls, that would work or if you don’t have that maybe you could find some Cinnamon Roll Bread.
I made these with Pillsbury cinnamon roll tubes (two fit a 10×10 pan. It does result in a baked french toast result. Delicious!
