Chicken Salad Recipe
This delicious Chicken Salad Recipe makes the perfect simple and light dinner recipe in summer! Perfect on a lettuce leaf or wrapped in a warm pita.
One of my favorite things about summer is the relaxed schedules. With a relaxed scheduled also comes a change in our meals. I don’t like to do a lot of baking in the summer, heating up the house and the kitchen, so we tend to do a lot of grilling. With the grilling done mostly on weekends, we like to grill up extra meat and save it for the coming weeks meals, thus simplifying dinners all summer long.
We also like to make a lot of delicious salad recipes for a lighter dinner option. One of our favorite Summer Main Dishes is this Chicken Salad Recipe. It is so good and a hit with the whole family. I LOVE that this recipe is so versatile and you can switch things out and replace them with your family’s favorites. If you don’t love cashews, throw some almonds or walnuts in the salad. Customize it fit your tastes!
Chicken Salad Recipe
Combine and chill for one hour:
4 ½ cups cooked(or grilled), diced or shredded chicken
2 cups celery, diced
4 ¼ tsp. lemon juice
1 can drained pineapple chunks
1 ½ cups red grapes, halved
1 (11 oz) can mandarin oranges
1 ½ cup cashews
Mix together. Then add the following:
1 ½ cup mayonnaise
½ cup whipping cream
2 tsp of salt
1 ½ tsp dry mustard
- Mix together and chill until served.
- Serve on a clean piece of lettuce or in a pita wrap.
The other part that makes this salad so great is that it can be served on a clean leaf of lettuce for a lighter gluten free dinner, or you can throw the chicken salad on a piece of pita bread for a little more substance. Either way you serve it up, your going to enjoy it!
