It’s hot here! Summer is the perfect time to enjoy a crisp, green salad for dinner for several reasons. The first reason is that salads are yummy. Second, many varieties of summer berries can be found in abundance. Third, they are quick to pull together for lazy summer evenings. And Fourth, they don’t require you to turn on the stove and heat up your already hot house.
This Summer Berry Salad is one of our family’s favorite Summertime Dinner ideas. You can basically use any of your favorite berries or fruits (think apples and peaches too). Throw together some mixed greens, chopped avocado, a few chopped nuts, some grilled chicken and a sprinkling of cheese (like feta) and you have a delicious meal that takes minutes to prepare.
Drizzle on some of your favorite Poppy Seed Dressing, and your family will be thanking you for dinner. This is a hit with every single member of our family. It is easy for them to personalize this Salad to their own tastes too by letting them add the toppings to their own liking.
Summer Berry Salad Recipe
Grilled Chicken, cubed
Berries of your choice (or fresh fruit)
Chopped Almonds (or nuts of your choice)
Homemade Poppy Seed Dressing Recipe
1 Tbsp. granulated sugar
1 1⁄2 Tbsp. apple cider vinegar
2 Tbsp. mayonnaise
1 tsp. Dijon mustard
1 Tbsp. vegetable oil
1 tsp. poppy seeds
Pinch of salt and pepper
- Combine all ingredients in a small bowl or jar.
- Whisk together or shake until combined and creamy.
- Refrigerate and store in an air-tight container.
