CAFE RIO DRESSING
One of our best things about going to our favorite Mexican place to eat is their delicious House Dressing…Cafe Rio’s Cilantro Lime Dressing! It is so good! I especially love it paired with our Copycat Cafe Rio Shredded Chicken. If you have ever tried it, then you know what I am talking about! My friend Laura brought this dressing to a church function and it tasted just like the real thing! She had taken a few different recipes and tweaked them to what she felt was the perfect copycat recipe for Cafe Rio’s House Dressing and was kind enough to share it with us!
HOW TO MAKE CAFE RIO RANCH DRESSING
This cilantro ranch dressing recipe couldn’t be easier to make. Sometimes it seems like might be easier to just grab some bottle dressing for your salad or tacos, but this Cafe Rio Ranch Dressing Recipe is so simple. Just grab all your ingredients and throw them into your high powered blender and blend all the ingredients together until they are smooth.
You can add a few extra ingredients or substitutions if you prefer. I have heard of people adding a could jalapeños to add a little spice to the recipe. You can also substitute the mayonnaise for greek yogurt or sour cream for a lighter dressing.

Cafe Rio Tomatillo Dressing
Our Copycat recipe for Cafe Rio’s Cilantro Ranch Dressing is so good! It’s made with cilantro, mayo, ranch seasoning, buttermilk, & tomatillos. It tastes just like your favorite Cafe Rio Ranch Dressing!
Ingredients
- 1 pkg. Ranch Dressing mix
- 1-2 tsp. lime juice
- 3 each tomatillos
- 1 cup mayonnaise
- 1 cup buttermilk
- 1/4 cup green enchilada sauce
- 1/2 cup cilantro
- 2 cloves garlic
- 1/4 tsp. red pepper flakes
Instructions

Throw all the ingredients into your high powered blender and blend until smooth and creamy!
