Mint Chocolate Chip Cookies
Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup butter softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon mint extract
- 8-10 drops of green food coloring optional
- 1/2 cup creme de menthe baking chips
- 1/2 cup semisweet chocolate chunks
Instructions

Preheat oven to 375 degrees F. Mix together flour, baking soda, and baking powder.

In a large bowl, cream together the butter and sugar until smooth. Beat in egg, mint, food coloring and vanilla. Gradually blend in the dry ingredients. Add the chocolate chunks and baking chips. Roll dough into balls, and place onto ungreased cookie sheets.

Bake 8 to 10 minutes in the preheated oven, or until golden. Let cool.

I made these for my kiddos on St. Patrick’s Day. They LOVED them! Said they were better than regular chocolate chip cookies. The store I went to didn’t have any creme de menthe baking chips so I chopped up a cup of Andes mints instead…yum! Thanks so much for this recipe…it’s a keeper in my house!

Does anyone know any substitutes for creme de menthe? If I just leave it out, will the peppermint essence be enough for the flavour?
I am a huge fan of mint chocolate chip ice cream so I was super excited to make these cookies. However when it came time to add the mint extract I had discovered I did not have any as it had spilled all over my spice cabinet. I substituted almond extract instead and the results were phenomenal….a deliciously sweet cookie with chocolate chips and a subtle nutty aftertaste. If these are so delicious with almond I CAN’T WAIT to try them with mint!
I love this recipe, though I’d used one from another site before. Add an extra 1/4 c flour, 1/4 tsp of salt and cut the mint extract to 1/4 tsp. This amount of mint extract overwhelms the chocolate and buttery flavor of the cookie dough. Creme de menthe chips are simply chopped andes mints, so substitute as you see fit.

I had been looking for a good cookie recipe that combined mint and chocolate, and this was absolutely perfect! The green color was festive and Christmas-y, and they were easy to throw together. Since I couldn’t find creme de menthe chips, I substituted 1 cup of Hershey’s mint chocolate chips instead of the creme de menthe and semisweet chocolate chips. I also just dropped the cookie dough onto the baking trays by the teaspoonful instead of rolling into a ball. Delicious recipe! I will definitely be making these again!
