EASY PEACH CAKE
One of my favorite things about the start of the new school year, is that it is also peach season here in Utah. The fresh peaches here are so delicious! I can’t ever get enough! We love to eat the peaches fresh, or sliced on oatmeal or baked into some of our favorite desserts. Some of our favorite peach desserts are my Peach Cobbler and Peach Crisp.
HOW TO MAKE PEACH CAKE
This peach cake is so easy to make. If you don’t have access to fresh peaches to add to the cake recipe, you can use canned peaches. Just make sure you drain the peaches well so there is no extra liquid you are adding into the ingredients.
You simply throw all the ingredients together and then fold in the flour so that it is just barely mixed together without over-mixing. Add everything into the bowl except for the pecans. Pour the peach cake batter into your 9×13 pan and then sprinkle the pecans over the top. This will add some pretty texture to your finished cake. I also like to save a few sliced peaches to drop on the top of the cake as well.
PEACH CAKE VARIATIONS
Guess what? You can use this same cake recipe and make a few different variations of your favorite fruit cakes. Some of the best substitutions for fresh peaches using this peach cake recipe would be as follows.
- blueberries
- strawberries
- apples
- cherry
- blackberries
- raspberries
HOW TO STORE PEACH CAKE
If you don’t eat all of the cake in one sitting (it could happen…this stuff is dangerously good), then you can store you cake in an air-tight container for up to 5 days. Too keep it a little longer, you can store it in the fridge to get a couple more days out of it.
You can also freeze your peach cake but the peaches may become a little soggy when warmed up. But it will still taste pretty darn good!

EASY PEACH CAKE RECIPE
Peach Cake
This quick, simple peach cake is the perfect dessert cake recipe. Fresh sliced peaches immersed in a sweet golden cake drizzled with vanilla glaze
Ingredients
- 3 egg beaten
- 1 3/4 cups white sugar
- 1 cup vegetable oil
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 2 cups fresh peaches peeled, pitted, and sliced
- 1/2 cup pecans chopped
Vanilla Glaze
- 1 cup Confectioner’s Sugar
- 2 Tbsp milk
- 1 tsp vanilla
Instructions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour a 9×13 inch pan.

In a large bowl, combine the eggs, sugar, oil, flour, salt, cinnamon, baking soda, peaches and pecans. Mix thoroughly by hand.

Pour into prepared 9×13 inch pan and bake at 375 degrees F (190 degrees C) for 50 minutes or until done.
Vanilla Glaze

Mix the sugar, milk and vanilla together.

Whisk or stir until smooth and creamy.

Drizzle over cake that is cooled so that the glaze shows up and doesn’t melt into the cake.
