MUFFIN MIX COOKIES
Hello Idea Room Readers. It’s Laura here from Pink Cake Plate. I am so excited to be here and share some of my Pink Cake Plate fun. I share some delicious and easy recipes with my readers so I thought I would share these delicious Blueberry Lemon Muffin Mix Cookies with you all.
Starting with a store bought muffin mix and adding a few other ingredients these cookies can be mixed up in a jiff. I love taking just about any shortcut I can when it comes to cooking and baking and these Blueberry Lemon Muffin Mix Cookies are no exception.
LEMON BLUEBERRY COOKIES
I love a soft chewy cookie and these cookies bake up soft and chewy and stay that way. The lemon drizzle on top makes them so pretty and adds a bit of a tangy sweetness to the cookies. They are so pretty even without the drizzle. The perfect combination of lemon and blueberries…these cookies hit the spot.

I think these would be perfect to whip up with your kiddos. It is summer vacation and what better activity to have with your kids that whipping up a batch of soft and chewy Blueberry Lemon Muffin Mix Cookies.

Blueberry Lemon Muffin Mix Cookies
Are You A Fan Of Blueberry Lemon Cookies? Today We Have A Fun Lemon Cookie Recipe You Are Going To Love! Try These Muffin Mix Cookies....An Easy And Delicious Cookie Recipe.
Ingredients
- 2 7 oz pkg Blueberry Muffin Mix I used Jiffy Mixes but will work
- 1/4 cup butter softened
- 1/4 cup vegetable shortening
- 1 teaspoon lemon extract
- 1 pkg instant lemon pudding mix dry
- 2 eggs
- 4 oz white candy melts
Instructions

Preheat oven to 350 degrees.

Mix all ingredients in medium bowl until blended.

Drop by tablespoon onto parchment covered baking sheet or greased cookie sheet.

Bake in preheated oven for 12-14 minutes.

Allow to cool for about 3 minutes on cookie sheet then remove cookies and allow to cool completely.

While cookies are cooling make Icing Drizzle.

Mix powdered sugar and lemon juice gradually add 1 teaspoon of water at a time to mixture until desired consistency is achieved.

When cookies are cool drizzle with Lemon Icing.

Makes approximately 2 dozen cookies.

These sound easy and yummy, but what are the candy melts for? And are the ingredients for the Lemon Icing missing? Thanks!

The ingredients for the lemon icing is missing from the ingredient list and the measurements.

Are the candy melts drizzled on top of the cookie after they are glazed or added to the cookie mix before baking?
They are added into the cookie mix. Hope you enjoy them!
I’m also confused about the candy melts. Melt them and add them or just add them to the mix??

I seen in another recipe that they used white chocolate morsels folded into the cookie batter.
