CITRUS SALAD
Vinaigrette is made by mixing an oil with something acidic such as vinegar, lemon juice, or lime juice…in this case we are using orange juice. It is used most commonly as a salad dressing, but can also be used as a marinade. The great thing about vinaigrette is there are so many different combinations you can create to best suite your taste preference and the salad you are making!BASIC VINAIGRETTE RECIPE
All you need to know is this most basic ratio for making a vinaigrette! It’s: 1 part vinegar to 3 parts oil. From there, there are many ways to enhance this recipe and make it your own! The mixture can be enhanced with salt, fresh herbs (such as cilantro) and/or spices. For instance, if you prefer a bit of sweetness in your salads, add a sweetener such as honey, maple syrup, or brown sugar. We love this orange vinaigrette, but you could also make a raspberry vinaigrette or a lemon vinaigrette.FAVORITE STORE-BOUGHT VINAIGRETTE
We love this homemade salad dressing because it is very fresh and it doesn’t have as many preservatives as store-bought dressing! But if you are short on time, you can use this store bought-dressing for a quick and immediate option…which is also delicious.BERRY SALAD
For the base of the salad greens you can add your favorite greens. We love to use a mixture of romaine lettuce, baby spinach and some iceberg lettuce. But really any mixture of greens will work for this salad. Then we love to add some citrus in the form of delicious fresh orange segments. You can just cut up an orange and add bite size pieces. Then add your favorite berries. We love to add blueberries, black berries, raspberries and strawberries. You can also add apples, which will enhance the flavor! Whatever you have on hand will work and the color makes this salad as pretty as it tastes! Then for a good crunch texture we love to add honey roasted peanuts…but any nut will work! We have tried it with toasted sliced almonds which is also amazing!SALAD SUPPLIES

Citrus and Berry Salad with Orange Vinaigrette
Ingredients
- 1 tsp onion minced
- 1 clove garlic minced
- 1/2 cup fresh orange juice
- zest of 1 orange
- 2 tablespoons balsamic vinegar, red wine vinegar, or white wine vinegar
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 teaspoon ground dry mustard
- drizzle of fresh lemon
- 1 tablespoon honey
- 1/4 cup extra virgin olive oil
Instructions

Place onion, garlic, orange juice, orange zest, vinegar, salt, pepper, mustard1, lemon juice, and honey in the blender2.

Slowly blend in olive oil3. Transfer to a storage jar4 and keep in the refrigerator.

To make the salad pictured in this post, add clean chopped salad and baby spinach to a bowl. Mix in the dressing. Top with toasted slivered almonds, sunflower seeds, strawberries, blueberries, blackberries, and pieces of fresh orange segments.
Recipe Notes
- In this recipe I use dry mustard. You can also use yellow mustard or dijon mustard for enhanced flavor.
- I use a blender to combine these ingredients, however, you can also whisk these ingredients together in a small bowl or shake them together in a bottle.
- I recommend using olive oil, but you can substitute with other light oils such avocado oil, sesame oil, sunflower seed oil, walnut oil, grape seed oil, etc.
- I love using the salad dressing bottles (which are linked above), but you can use any storage jar, such as a mason jar.
