It seems like we get busier every year as the kids get older. With all the kids playing a spring sport, we don’t have a lot of time to make big fancy meals that take a lot of preparation time to make. I also try to not get trapped up in grabbing a quick dinner from a fast food place when I can. So it’s important for me to have some really quick but delicious 30 minute meal recipes to pull out when needed.
CRISPY CHICKEN
This Crispy Baked Ranch Chicken recipe is a quick and easy weeknight dinner recipe your whole family is going to love.
Not only does it taste great, it is so easy to make. It literally can be on the table in about 40 minutes. You can also even prep this before hand and then dip the chicken in the bread crumbs right before it needs to go in the oven. This is also a recipe that I sometimes hand over to one of the kids to make on their dinner night. Its so easy, even my 9 year old can make it!
This is also a recipe that the entire family loves. The Ranch Chicken is like a grown up version of the kids favorite Chicken Strips. You can bake this and use whole chicken breasts, but we prefer to use cut strips of chicken. It cooks faster for us then using a whole chicken breast.
HOW TO MAKE RANCH CHICKEN

INGREDIENTS:
- 3-4 boneless, skinless chicken breasts
- 1/4 cup butter, melted
- 1 (1 ounce) packet Ranch dressing seasoning mix
- 1 cup crushed Panko Bread Crumbs
- 1/2 cup grated Parmesan cheese
DIRECTIONS:
- Preheat oven to 350 degrees.
- Spray a 9×13 glass baking dish with cooking spray.
- Combine the Ranch seasoning mix, the Panko Bread Crumbs and Parmesan cheese into a large freezer baggie.
- Shake well to mix all together.
- Dip each chicken breast into the melted butter, and then drop into the baggie. Seal the bag shut and then shake well to coat with the seasoning mix. After well coated lay chicken into the baking dish. Repeat with all of the chicken.
- Once all chicken has been coated, sprinkle the remaining seasoning mixture onto the tops of chicken.
- Bake chicken for 40-45 minutes. Check chicken at 30 minutes and cover with foil to prevent burning if it is getting too browned and finish cooking chicken.

BAKED CHICKEN
If you are baking chicken strips you might be able to cut down your baking time. Be sure to check it and make sure it is cooked all the way through. If the chicken topping is beginning to burn or char, cover the chicken with foil and finish baking until it is thoroughly baked.
SIDE DISHES
Pair this meal with a quick salad you can throw together while it is baking, or your favorite roasted veggies. This time I paired it with our Roasted Parmesan Asparagus recipe (which you can find HERE). You can whip up a dipping sauce if you want, but we prefer to eat it as is since it is really flavorful on its own.

Obviously going to try this, but must you put the mixture inside a bag or can I just put it inside a bowl and mix?
SAADAH, you could put the chicken in the bowl and mix. It just coats the chicken nicely when you put it in a bag. Then you can just throw away the bag after. Less dishes, which is a plus!
Is this supposed to be 1 16 oz packet of ranch dressing? It says 1 oz.

Is there a alternative to the ranch dressing as we don’t have that here in the UK. Unless it’s called something else here. Love the sound of the recipe and thankyou for sharing.

Andrea- Yes, In a small bowl, stir together the parsley, pepper, seasoned salt, garlic powder, onion powder and thyme. Then add in Greek Yogurt or Mayonnaise and Milk to the consistency you like. Hope this helps. Thanks!
