HOW TO MAKE BROWNIE COOKIES
Sharing how to make these delicious Brownie Cookies below.
INGREDIENTS:
- 1 cup butter
- 1 2/3 cups white sugar
- 2 eggs
- 1 ¼ teaspoon vanilla
- ¾ cup unsweetened cocoa
- ¼ teaspoon salt
- 1 ¼ teaspoon baking powder
- 2 1/3 cups cake flour (if using all-purpose flour you will need less…start with 2 cups flour, add as needed and check dough for stickiness)
DIRECTIONS:
- Cream butter and sugar.
- Add eggs and vanilla and mix until blended well.
- Add dry ingredients and mix.
- Cookies can be rolled, formed into drop cookies, or pressed into a 9 x 13 pan (double recipe and bake time).
- Roll out dough and cut into circles.
- Bake at 350 for 10-12 minutes.
- Cookies are done when top is slightly cracked and no longer looks wet

Marshmallow Creme
Ingredients
- 3 large egg whites
- 2 cups light corn syrup
- ½ teaspoon salt
- 2 ½ cups powdered sugar
- 1 tablespoon vanilla
Instructions

Combine egg whites, corn syrup, and salt. Beat on high speed for 10 minutes or until thick. Add powdered sugar and beat on low speed until blended. Add vanilla and blend. May be frozen for later use.

Chocolate Frosting
Ingredients
- 1 cup butter
- 4-5 cups powdered sugar
- 1 splash milk
- ½ cup unsweetened cocoa
- 1 teaspoon vanilla
Instructions

Beat soft butter, cocoa, and powdered sugar together until smooth. Add a splash of milk and vanilla, blend well.

Spread cooled cookies with about 1 tablespoon of marshmallow creme. Top the creme with frosting.

Make sure you have a gallon of milk when you are ready to indulge because you are going to need it! So much chocolate-y goodness that will leave you licking every last bit off of your fingertips.
Go ahead and make them! I think you will enjoy them! Be sure you have a neighbor or a party you can drop them off to, or else you may be in danger of eating them all by yourself!

My 12 year old has been talking about making marshmallow…. I think I will send her this way!
Can you give me a rough idea about how many this might make if we did drop cookies from a small scoop? My 5th grade daughter has an extra credit math project that requires scaling recipes but I need to know if one recipe will feed her class without scaling it. Thanks!
