I am excited to be sharing our Gingerbread Cheesecake Bites Recipe, it one of our family’s favorite Christmas Recipes. Rich and creamy with a hint of warm spices rolled in a layer of tangy gingersnap crust. All the taste of gingerbread cheesecake without all the calories in bite size pieces.
BITE-SIZED GINGERBREAD CHEESECAKE
Bite sized gingerbread cheesecakes make these the perfect treat to bring to your holiday parties and share with your friends and family.
My sister got this Gingerbread Cheesecake Bites Recipe from her in-laws and it has now become a regular addition to our family’s Christmas Eve treat table and one of our favorite Christmas desserts. Also, these make great neighbor treat gifts if you want to make some to gift to others!
You can easily change up the spices and their amounts to fit the recipe to your taste preferences. However, we like the spice combination in this recipe. It is so full of delicious Gingerbread flavor. I have to say, they are pretty tasty the way they are.

DO CHEESECAKE BITES NEED TO BE REFRIGERATED?
Yes, Cheesecake Bites need to be refrigerated. If you wrap them in plastic, your cheesecake will last three days in the refrigerator. If you have an airtight container that you can put it in, it’ll last five days.
CAN I FREEZE CHEESECAKE BITES?
Did you know that Cheesecake Bites can be frozen for up to 3 months? To freeze, wrap the bites in plastic wrap and then cover with heavy-duty aluminum foil and place in the freezer.

- Jelly roll baking sheets
- Silpat baking liners
- Kitchenaid mixer

INGREDIENTS IN GINGERBREAD CHEESECAKE BITES
full fat cream cheese or low fat
gingersnap cookie crumbs
HOW TO MAKE GINGERBREAD CHEESECAKE RECIPE
- Line a 13″ x 9″ baking sheet with a parchment paper. Set aside.
- Place the cream cheese in a bowl of a stand mixer or you can use a hand mixer. On medium speed cream the cheese with the sugar and half and half and whip until smooth and creamy.
- Mix in the spices.
- Add in the cool whip and fold in with a spoon or spatula, until just combined.
- Spread it out evenly in the 9×13 pan. It will be thin. Place in freezer for 1-2 hours.
- Take your gingersnap cookies and place them into a food processor to chop the cookies into a fine crumb or break them up with a rolling pin while the cookies are in a freezer bag.
- Place gingersnap crumbs into a small bowl.
- Scoop the cheesecake mixture with a small cookie scoop or a tablespoon and roll in cookie crumbs.
- Place the balls on a jelly roll pan or a tray covered with parchment paper or wax paper.
- Place the tray of gingerbread cheesecake bites in the refrigerator and chill for couple of hours in freezer until they get frozen.
- When ready to serve, let sit out for 5 minutes at room temperature to desired firmness.

Gingerbread Cheesecake Bites
These Gingerbread Cheesecake Bites Are One Of Our Family’s Christmas Traditions. They Are The Perfect Size To Pop In Your Mouth. The best part is, you can make them and freeze them for later!
Ingredients
- 1 TBS half and half
- 8 oz. cream cheese, softened
- 1/4 TBS ground cinnamon
- 1/4 TBS ground ginger
- 1/4 TBS ground allspice
- 1/8 TBS ground nutmeg
- 1/8 TBS ground cloves
- 2 TBS granulated sugar
- 1 cup cool whip
- 1/2 cup gingersnap crumbs
Instructions

I’m a little confused with the directions, after mixing the cream cheese,etc. Do you freeze on the 9×13 pan with the parchment paper or in the mixing bowl?

Patty- Yes, freeze on the parchment paper lined pan. Then remove and scoop into balls. Then you can freeze them again. Sorry so confusing. Hope you enjoy them as much as we do!
So does the recipe only make 12 bites? Need to clarify to make sure I have enough to serve all my guests.
