PEPPERMINT CHOCOLATE CHIP COOKIES
I have another delicious and easy Christmas Cookie recipe for you today! These are great anytime of the year though if you are a fan of chocolate and peppermint! But they are extra festive if you need to bring a cookie recipe to a holiday party or a cookie exchange. I love the combination of chocolate and peppermint so these Peppermint Chocolate Chip Cookies could be a go to recipe for me anytime of the year!
PEPPERMINT COOKIES
You can add a little extra peppermint oil to the recipe if you really like a good amount of peppermint kick in your peppermint cookies. I usually don’t add it unless I am going to be eating the cookies because sometimes people don’t like as much peppermint as I do! I don’t want it to be too overpowering for my guests.
CHOCOLATE CHIP PEPPERMINT COOKIE RECIPE
If you love a good chocolate chip cookie, you are going to enjoy this chocolate chip peppermint cookie recipe. The base cookie is a great chocolate chip cookie recipe on its own. Then you add the white chocolate chips and some semi-sweet chocolate chips to give it a fun twist in flavors. If you don’t like any of those chocolate chips, feel free to add a combination of flavors you do enjoy! Milk chocolate chips would be a great substitute!

WHITE CHOCOLATE PEPPERMINT COOKIES
White Chocolate Peppermint Cookies
Ingredients
- 6 tbsp unsalted butter softened
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 large egg
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1 1/4 cups white chocolate chips
- 1/2 cup peppermint candies crushed
Instructions

Preheat oven to 350 degrees.

Add the butter, sugar, brown sugar, salt, baking powder and baking soda to the bowl of a stand mixer. Mix on low until combined and then beat on medium speed for about 1 minute.

Beat in egg and vanilla until smooth. Stop mixer and add the flour and white chocolate chips. Mix on low speed until a cohesive cookie dough forms, about 1 minute.

Use a medium size cookie scoop to form 24 cookie dough balls.

Dip the top half of each ball in the crushed peppermint candies. Place the cookies on baking sheets lined with Silpat baking mats or parchment paper (12 cookies per baking sheet).

Bake the cookies for 10 - 11 minutes. I rotate the pans front to back and top rack to bottom rack halfway through baking time.

The cookies should look a bit underdone when you take them out of the oven. They will set up as they cool.

Allow the cookies to cool on the baking sheets for 10 minutes. Remove them to a cooling rack and allow to cool to room temperature.

Peppermint & chocolate is the best!! I especially love these cookies!! Perfect for cookie exchanges & gifts!
I’ve done NO baking this Christmas, but these caught my attention and I thought, “I can make one small batch of cookies for my poor kids…”. Well, they are almost gone and everyone is convinced that the white peppermint is really crack because they’re so addictive. So, the only problem with the recipe is: it doesn’t make enough! Fortunately, I have 1/2 bag of white chocolate chips left, and I crushed too many peppermints, so I might just have to make a second batch – tonight! Merry Christmas!
