SLOW COOKER SOUP
This Slow Cooker White Bean Sausage Spinach Soup is pretty tasty and is so easy to make. Who doesn’t love dinner recipes that are that easy? With 5 kids and all their busy schedules, this is a recipe that has saved this mom’s sanity on many busy nights! It saves me from creating lots of dirty dishes and spending all my time in the kitchen making a healthy meal for my family.

The end of summer means one thing…. soup season! It’s time to break out the slow cooker. One of the simplest joys that the cold weather brings is coming home to a hearty slow cooker soup that’s been cooking all day. Not to mention the delicious aroma that fills the entire home!

Slow Cooker White Bean Sausage Spinach Soup
Ingredients
- 1 Tbs olive oil
- 1 12.8 oz sausage (smoked andouille sausage, thinly sliced)
- 3 cloves minced garlic
- 1/2 each Onion, diced
- 3 each Carrots, sliced
- 2 stalks Celery Stalks, diced
- 2 cans white beans (15 oz, drained)
- 1/2 tsp dried oregano
- 2 each bay leaves
- 4 cups chicken broth
- 1 pinch salt and pepper to taste
- 3 cups baby spinach
Instructions

Heat olive oil in a large skillet over medium high heat.

Add thinly sliced sausage, and cook, stirring frequently, until lightly browned, about 3-4 minutes.

Place sausage, minced garlic, diced onion, diced carrots, diced celery, drained beans, oregano and bay leaves into a 6-qt slow cooker.

Stir in chicken broth and 2 cups water until well combined; season with salt and pepper, to taste.

Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours.

Stir in spinach until wilted.

Serve immediately.

I’ve never cooked with andouille sausage so don’t know how it holds up in cooking. I use kielbasa in my slow cooking and it always turns into rubber. On a cooking episode, Alton Brown browned and served the sausage on top of the soup, rather than cooking it in the soup. I tried it and it worked like a charm so I’ve been doing that ever since.

I’m eating this soup as I type this comment. I can say, with certainty, that it tastes as good as it looks! I used my Instant Pot and cooked it for 25 min with a quick release then added the spinach, which wilted quickly. This recipe will be on repeat for sure!
