S’mores Cookies are the one of our favorite cookie recipes. Made with a toasty marshmallow, graham crackers and topped with a chocolate bar, these S’more Cookies will have you wanting more!
S’MORE COOKIES
If you have ever wanted to try your hand at making s’more cookies, you have to give this recipe a try. I got this recipe recently from my friend Chelsea for a church activity I was helping to plan. We had a camping theme and these S’more Cookies were the perfect dessert!
We changed up the recipe a little from the original one and I love the final results. Instead of adding mini marshmallows to the cookie batter and golden grahams cereal, we added some crushed graham crackers and cut a large marshmallow in half and roasted it on top of the cookie!
HOW TO MAKE S’MORES COOKIES
These smores cookies have a couple of additional steps to them as opposed to a regular cookie recipe. Make sure you read through all the steps to know what you will need to do to ensure these cookies come out perfectly!
- Preheat oven to 375 degrees.
- Cream butter with sugars.
- Add eggs one at a time and beat until fluffy (about 2 minutes). Then, add vanilla.
- Add flour, baking soda, salt and chocolate chips to mixing bowl. Mis just until dry ingredients are incorporated.
- Fold in crushed Graham Crackers with a rubber spatula until they are just incorporated into the cookie dough.
- With a large cookie scoop or spoon, scoop cookie dough and shape into 18 balls (about the size of a golf ball).
- Place onto cookie sheets that are lined with silicone mats or parchment paper.
- Bake for 7 minutes.
- Remove from the oven and immediately place half of a marshmallow on the top of each cookie and then return the tray of cookies back into the oven.
- Bake for an additional 2 minutes.
- Remove from the oven for good and immediately place one rectangle piece of the Hershey’s chocolate bar on the top of the marshmallow.
- The chocolate bar will get all melty. If you wanted it melty then just let the cookies rest on a cookie cooling rack. If you don’t want the chocolate to melt so it looks a little prettier, you can pop the tray into the refrigerator to stop the melting.
- Serve warm if possible! Or warm slightly in the microwave when ready to serve.
- Store in an airtight container…although I doubt you will have any left!
