Yesterday, I shared our Strawberry Cupcakes recipe. Today, I will be sharing our Pink Lemonade Cupcakes Recipe. Oh. My. Goodness, these are SO GOOD! You have to like pink lemonade though to like these. They are a bit tart, but really tasty!
EASY CUPCAKE RECIPE
Since we have quite a large number in our family, one batch of cupcakes isn’t going to cut it, so I made two for my daughter’s birthday party. The Strawberry Cupcakes on yesterday’s post and these pink lemonade ones.

Pink Lemonade Cupcakes

Ingredients
Cupcake Ingredients:
- 3/8 cup water
- 3/4 cup pink lemonade (frozen concentrate, thawed)
- 1 box white cake mix
- 3 eggs whites
- 2 Tbs vegetable oil
Lemon Buttercream Ingredients:
- 3 + 3 Tbs cups confectioners sugar
- 1 stick unsalted butter (room temperature)
- 1/8 tsp salt
- 1 Tbs lemon juice
Instructions
Cupcake Instructions:

Mix all ingredients together in mixer.

Mix until just incorporated.

Fill cupcake liners 1/2 to 3/4 full.

Bake for 20-25 minutes at 350 degrees.
Lemon Buttercream Instructions:

Mix until creamy with no lumps of butter.

Fill a pastry bag and pipe onto cool cupcakes.
* I found the recipe for these at Confections of a Foodie Bride. I altered the original recipe a bit so that mine would be a bit less tart! If you don’t want the tartness to be to overwhelming you may want to do the same. I really like how they turned out

My husband was a BIG fan of these cupcakes. He ate two in one sitting…sorry about that babe!

I Love the show Cupcake Wars. I have been making up my own lately. I have made Rootbeer Float, Chocolate Strawberry, Chocolate Malt, and Peaches and cream. I have not ever heard of pink lemonade! I will have to give them a try :)

I have had a red velvet cupcake that had chocolate chunks in the cake, with the traditional cream cheese frosting…they were delicious…something different to try!
Sounds delish! They look "nice" too, and I would serve them at a baby shower or some other shower party! I think they are darling! :)

I had a piece of lemonaid cake once that I loved! I am betting this taste similar so thank you so much for the recipe! I needed a treat idea for Sunday's primary lesson and this will be perfect! I love it when you share recipes and craft ideas! All you stuff is great but those two are my favs!
