CHOCOLATE CREPES
One of our favorite ways to enjoy a lazy weekend morning is to whip up a batch of Chocolate Crepes. These are enjoyed by the entire family. We have experimented with a few different Crepe Recipes and I think out of the several we have tried this is the best recipe we have found.
DESSERT CREPES
I love fresh fruit and love to find ways to use it as “treats” and “desserts” in place of traditional desserts. I feel like I can still enjoy something sweet without feeling like I need to go and run a marathon afterwards.
They are pretty simple to make and you can totally customize them to fit your tastes. Fill the Chocolate Crepes with fresh raspberries, strawberries, kiwis, blackberries and blueberries. Then drizzle with your favorite whipping cream or yogurt.
COCONUT WHIPPED CREAM
For a dessert, we have used whipping cream (or my favorite Coconut Whipped Cream for those of you who want a non-dairy option)
COCONUT WHIPPED CREAM
Ingredients
- 1 14 oz can unsweetened coconut milk
- 2 Tbsp sugar
- 1 tsp pure vanilla extract
Instructions

Refrigerate can of coconut milk, 8 hours or overnight.

Place metal mixing bowl and beaters in the refrigerator or freezer 1 hour before making whipped cream.

Open can of coconut milk, taking care not to shake it. Scoop coconut cream solids into cold mixing bowl. Reserve remaining liquid for another use.

Beat coconut cream using electric mixer with chilled beaters on medium speed; turn to high speed. Beat until stiff peaks form, 7 to 8 minutes. Add sugar and vanilla extract to coconut cream; beat 1 minute more. Taste and add more sugar if desired.

CHOCOLATE CREPES RECIPE

Ingredients
- 3/4 cup all-purpose flour
- 2 cups milk
- 2 large eggs
- 3/4 cup unsweetened cocoa powder
- 1/2 tsp vanilla
- 1/8 tsp salt
- 2 Tbsp sugar optional
BERRY SAUCE
- 1 cup raspberries fresh or frozen
- 1 cup blueberries fresh or frozen
- 1 cup strawberries sliced, fresh or frozen
- 1/2 cup sugar
- 1/2 cup water
- 1/4 tsp ground cinnamon
CREAM CHEESE FILLING:
- 4 oz cream cheese softened
- 2 Tbsp sugar
- 2 Tbsp lemon juice
Instructions

In a large bowl or bowl of a stand mixer, whisk together milk, eggs, flour, cocoa powder, sugar, vanilla and salt on medium speed until smooth.

Transfer bowl to refrigerator and let sit 30 minutes.

Pour ¼ to ½ cup batter onto heated pan.

Cook on medium heat until cooked through.

Flip over and cook on other side.

Fill with your favorite fillings and serve warm.
BERRY SAUCE:

Mix all berries in sugar, water and cinnamon by hand.
CREAM CHEESE FILLING

Mix softened cream cheese, sugar and lemon juice together by hand or with an electric mixer.
