We love Breakfast foods at our house. One of our favorite ways to enjoy a lazy weekend morning is to whip up a batch of Berry Cream Cheese Crepes. These are enjoyed by the entire family. We have experimented with a few different Crepe Recipes and I think out of the several we have tried this is the best crepes recipe we have found.
CREAM CHEESE CREPE FILLING
We love filling the crepes with berries and cream cheese (or whipped cream). I personally like to whip up some coconut milk and make a coconut whipped cream. We also change it up and fill the crepes with a lot of different things.

CREPE RECIPE
The great thing about crepes is that you can make them sweet or savory. Just fill them up with what you are in the mood for…or what you have on hand. If you are making a savory crepe, you can leave out the sugar in the recipe.

Ingredients
- 2 cup all-purpose flour
- 4 large eggs
- 1 cup milk
- 1 cup water
- 1/2 tsp salt
- 4 Tbsp butter melted
- 4 tsp sugar optional
BERRY SAUCE
- 1 cup raspberries fresh or frozen
- 1 cup blueberries fresh or frozen
- 1 cup strawberries sliced, fresh or frozen
- 1/2 cup sugar
- 1/2 cup water
- 1/4 tsp ground cinnamon
CREAM CHEESE FILLING:
- 4 oz cream cheese softened
- 2 Tbsp sugar
- 2 Tbsp lemon juice
Instructions

In a large mixing bowl, whisk flour and eggs. Slowly add milk and water stirring until smooth. (I use my immersion hand blender.) Add salt and butter (and sugar if making dessert crepes) and continue beating until smooth.

Heat and oil pan to medium high temperature. Pour about ¼ cup of batter into pan and tilt the pan to swirl in a circular motion so that the batter coats the surface evenly. I have a crepe maker that also works great and is super simple to use. Either will work.

Cook crepe for about 1 to 2 minutes until the bottom is light brown. Loosen with a spatula, and turn crepe over and cook its other side for about 1 minute.

Serve hot and Fill or top however you desire.
BERRY SAUCE:

Mix all berries in sugar, water and cinnamon by hand.
CREAM CHEESE FILLING

Mix softened cream cheese, sugar and lemon juice together by hand or with an electric mixer.

- Cast Iron Skillet
- 9×13 Non-Stick Wilton Pan with Cover
- Whipped Cream Dispenser
- Powdered Sugar Spoon
- Blendtec Blender
- Hot Pads
- Stainless steel skillet
- Wooden Utensils
- White 9 x 13 Stoneware Pan
You can dust them with a little bit of Confectioner’s Sugar if you want a little extra sweetness. But I think they are the perfect sweetness without it. But there are some in my household who would dare to disagree with me!
COCONUT WHIPPED CREAM
Several of you have asked about Coconut Whipped Cream. So I decided to share my recipe here. It is so simple. I keep a can of Coconut Milk in my fridge so it is ready to whip up when I want some. The key is to having cold milk and a cold bowl!

COCONUT WHIPPED CREAM
Ingredients
- 1 14 oz can unsweetened coconut milk
- 2 Tbsp sugar
- 1 tsp pure vanilla extract
Instructions

Refrigerate can of coconut milk, 8 hours or overnight.

Place metal mixing bowl and beaters in the refrigerator or freezer 1 hour before making whipped cream.

Open can of coconut milk, taking care not to shake it. Scoop coconut cream solids into cold mixing bowl. Reserve remaining liquid for another use.

Beat coconut cream using electric mixer with chilled beaters on medium speed; turn to high speed. Beat until stiff peaks form, 7 to 8 minutes. Add sugar and vanilla extract to coconut cream; beat 1 minute more. Taste and add more sugar if desired.

This is very similar to the recipe I use, but I think my batter is a little thinner. It also calls for putting the batter, covered, in the fridge for at least 2 hours. Sometimes to ‘jazz up’ the batter I add a tablespoon or so of Baileys Irish Crème- gives it a nice flavor :-) I use a 10″ omelet pan in which to cook them and it keeps a consistent size. My husband likes to wrap some around sausage with syrup and then have dessert ones with lots of whipped cream!
