CHEWY GINGER MOLASSES COOKIES
This recipe reminds me of growing up and is the recipe my mom used to make for us when we were kids. She always let us roll the cookies in the sugar and place them on the cookie sheets. I am sure we were more of a hindrance than a help to her and the progress of the cookie baking…but we always felt like we were great helpers in the kitchen.
POSSIBLE VARIATIONS
These cookies are the perfect combination of soft and chewy! You can also add a tasty Sugar Glaze to the cookies if you would like to, but it is optional and they taste just as great without any glaze. We like to dust them after they have soaked and cooled with some confectioners sugar too. But sometimes it is nice to fancy them up a bit if you are taking them as Christmas cookies to a Holiday Party.
HOW TO STORE GINGER MOLASSES COOKIES
Store these delicious ginger cookies by keeping them in an air tight container in a cool place. They should stay fresh for up to 1 week or 2 weeks if kept in the refrigerator.
CAN YOU FREEZE GINGER MOLASSES COOKIES?
These ginger molasses cookies freeze well, so they are perfect to make a batch or two ahead of time and freeze for later. Then all you need to do is pull them out and let them thaw before serving…although I have been known to sneak them out of the freezer and eat them right then and there!

Did you use fresh ginger or ginger powder?
Amy says
I just used the ginger powdered spice.
yes, cookies are always a good idea, especillay when they look as good as these
haha!
Do you think real butter would be an okay substitute for shortening? I never have any on hand.
Yes. I use real butter all of the time! The texture might change slightly but it should still be great.
Can I use regular Crisco instead of butter Crisco? CJ
Yes. It should be fine. The flavor may be a little different.
These look delicious. I may make them for my cookie exchange this Christmas. About how many cookies does this recipe make? Thanks.
How many cookies does this recipe make? 2 Dozen?
Yes…about two dozen depending on the size you make the cookies.
I have made this recipe three times now, and each time they turned out awesome! The first time was for a cookie exchange, and i got 5 dozen regular sized cookies out of this recipe, which was much more than the 2 dozen i was expecting, but just meant i didnt have to make so many batches. :)
I made the cookies for my next two batches larger to get that real big soft chewy cookie, and still got 4 dozen easy.
I found my cookies didnt stay rounded like yours; they all fell when you took them out of the oven, but it doesn’t bother me a bit.
Overall a great recipe!
2014 will forever be know as the “Year of the Molasses Cookie” for me. Thanks!
One of my favorite cookies! I am probably going to make these when I wake up. They look so delicious! Cannot hardly wait to try them. We are getting snowed in here, so these will be great with some hot cocoa!
What type of molasses did you use?
mmm… these look so tasty! Definitely pinning this for later! Thanks!
I just made these and they were fantastic! My kids loved them and I blew my diet, but it was worth it. :) Plus, the recipe makes a bajillion! I’m going to make these at Christmas and give them as gifts. Easy and delicious. Yum!
