PUMPKIN CHOCOLATE CHIP COOKIES
This Pumpkin Chocolate Chip Cookies Recipe is one of the best that we have tried. Crispy on the outside and chewy on the inside!
Ingredients
- 1/2 cup unsalted butter
- 1/4 cup white sugar
- 3/4 cup lt. brown sugar
- 1 large egg yolk
- 1 tsp vanilla
- 1/3 cup canned pumpkin
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground cloves
- 1/8 tsp ground nutmeg
- 1/2 tsp allspice
- 3/4 tsp baking soda
- 1 1/2 cups all-purpose flour
- 2/3 cups chocolate chips
Instructions
-
Place the butter in a microwave-safe large bowl and microwave until the butter is melted.
-
Whisk in the white and brown sugar until completely combined.
-
Whisk in the egg.
-
Add in the vanilla and canned pumpkin. Whisk until well combined.
-
Add in the salt, cinnamon, ginger, cloves, nutmeg, and allspice.
-
Whisk in the baking soda with 1/2 cup flour.
-
Add the remaining 1 cup of flour and stir it in with a wooden spoon.
-
Stir in the chocolate chips.
-
Cover and chill the dough in the refrigerator for at least 1 hour.
-
Preheat the oven to 350 degrees F.
-
Once the dough has been chilled, line a baking mat with a nonstick liner (or parchment paper).
-
Roll cookie dough into balls.
-
Bake for 9-12 minutes or until very lightly browned at the bottom. The key to these cookies is slightly under-baking – that will keep them soft and chewy in the inside.
-
Remove from the oven and allow sit for another 1-2 minutes on the baking sheet before removing them to a wire cooling rack.

Approximately how many cookies does this recipe make?
2 dozen cookies. Thank You!
I am all ready for everything pumpkin! I am so excited for fall! Love pumpkin & chocolate together!
Natalie- I am too!
My family can’t get enough of these cookies!! They are the most soft & fluffy cookies. We like adding nuts, too!
Kristyn-I will have to try adding nuts. That sounds yummy!
Looks like the instructions left out when to put in the sugars:( I just put in when I realized that the sugars were still sitting on my counter. Hopefully they bake up and are delish:)
Denise- So sorry. Fixed the mistake! Thanks for letting me know.
These are amazing. I make a double batch. The only change I make is that I added half of the ginger; they are a little “spicy” to me. Have you tried this recipe baked in a 13×9 dish for cookie bars? Thank you for the recipe!
Elena- I will have to try making cookie bars next time! Such a great idea! Glad you enjoyed them!
We make these a lot!! They are the softest cookie! It’s our favorite cookie to take to friends all fall long!
