COCONUT BALLS
These are fun to make for your Holiday Parties or to serve to family and friends. Or as a little snack to keep in the freezer or fridge for when you need a little pick me up.
CHOCOLATE COCONUT BALLS
Dip them in white chocolate, milk chocolate or dark chocolate…whichever chocolate is your favorite! Keep them in the fridge or freezer until you are ready to serve them.
HOW TO MAKE COCONUT BALLS
INGREDIENTS:
- shredded, unsweetened coconut
- coconut oil
- coconut milk, unsweetened from carton
- powdered sugar
- dipping chocolate (white, dark or milk chocolate), melted
DIRECTIONS:
- Line a half baking sheet or plate with parchment paper; set aside.
- In a bowl, add coconut, coconut oil, coconut milk and powdered sugar. Mix until thoroughly combined.
- Take a teaspoon size amount of the coconut mixture and roll in the palm of your hand.
- Place coconut ball on parchment paper. Do the same with the rest of the coconut.
- Place in the freezer for 30 minutes.
- Melt chocolate in a double boiler or microwave.
- Remove coconut balls from freezer and immediately dip.
- Place coconut bites onto parchment line baking sheet.
- Store in the refrigerator until ready to serve.

These sound so good, coconut with chocolate would be a great combination. I think that my mother bought something like this from the store for Christmas, but when I got there my sisters that still live with my parents ate them all. I don’t know if I would make them very well, but I’ll have to try!
Do these have to be kept in the refrigerator?
Yes, they should be kept in the refrigerator.
Can I use something instead of coconut oil? Something simple maybe? (not so expensive and available in every store)

Also if I want to use them as a gift for Christmas, how can I be sure they won’t melt under the Christmas tree?
I haven’t tried using anything other than coconut. But, I am sure you can. Also, I wouldn’t pull them out until right before gifting them.
My Mom loves coconut and chocolate at 86 made these for her I enjoy cooking for her dad has pasted and for years learning from them both I cook or bake anything she wants
